- 1/2 cup millet flour
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 2 teaspoons granulated sugar
- 1/4 oz. (7 g) dry quick-rise yeast granules
- 1 teaspoon olive oil
- 3/4 cup plus 1 tablespoon water, heated to 110°F
- Optional: Cornmeal
Rustic Apple Tart (AR)

1) Preheat oven to 400°F
- 1 prepared traditional pie Crust dough
- 5 cups firm apples cut into small chunks
- 1/4 cup granulated sugar
- 1 tablespoon corn starch
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter
- 1 1/2 tablespoons apple or red currant jelly, optional
Sauteed Sea Scallops

1) Heat oil in a large saute pan over high heat until the oil smokes
- 16 large scallops for main courses; 18 small sea scallops, or 6 very large sea scallops, for first courses
- 3 tbs vegetable oil, olive oil, or grapeseed oil
- Salt, preferably fleur de sel

Baking Chocolate (Semi-Sweet)

1) Melt butter. Add cocoa powder and sugar to the bowl and mix everything together until the chocolate is smooth
- 3 tablespoons butter
- 1/2 cup (59 g) cocoa powder
- 3 tablespoons sugar OR 21 drops stevia extract
Sweetened Condensed Milk Substitute

- 1/2 teaspoon baking powder

Whole Chicken (PC-BW)

1) In a small bowl, comnine paprika, thyme, poultry seasoning, salt, and pepper
- 1 teaspoon paprika
- 1/2 teaspoon thyme
- 1/4 teaspoon poultry seasoning
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 (3-4 lb) whole chicken, rinsed well
- 2 tablespoons olive oil
- 1 1/2 cups chicken stock or broth
- 2 tablespoons dry white wine
- Juice of 1 lemon
Berry Fruit Tart (AR)

- 1 Vanilla cream pie filling recipe
- 1 Traditional pie crust or tart shell crust, prebaked, cool
- 1 1/2 - 2 cups fresh strawberries, blueberries, and/or rasberries (rinsed and completely dry)
- 1/2 cup strawberry jelly
- 1 tablespoon brandy or cognac
Key Lime Pie (AR)

- 1 prebaked tart shell crust, baked in a 9" pie pan
- FILLING
- 1/2 cup Nellie & Joe's Key West Lime Juice
- 3 large egg yolks
- 1 14 oz. can sweetened condensed milk
- TOPPING
- 3/4 cup heavy cream
- 2 tablespoons confectioners' sugar
- 1 1/2 teaspoons pure vanilla extract
Minty Green Uplift & Clarity Smoothie

- 1 cup water or unsweetened coconut milk
- 1 handful mint leaves
- 1 green apple, unpeeled, cored, and cut into chunks
- Handful of kale, chard, or spinach leaves

- 1/2 cucumber, cut into chunks
- 1/2 avocado, pitted and peeled
- 1 tbs freshly squeezed lime juice
