- 1 cup (163 g) brown rice flour mix sifted 3 times before measuring
- 1 1/2 cups egg whites, at room temperature (about 12 egg whites)
- 1 1/2 teaspoons cream of tartar
- 1/2 teaspoon guar gum (or xanthan gum if guar gum unavailable)
- 1/4 teaspoon salt
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon pure almond extract
- 1 cup sugar

- 1 1/2 teaspoons xanthan gum

- 1 packet (1/4 oz.) active dry yeast granules (not quick-rise)
- 2 large eggs (room temperature is best)
- 3 tablespoons oil
- 3/4 cup plus 2 tablespoons skim milk (110 °F)

- 1 cup plus 3 tablespoons skim, 1%, or 2% milk (between 65 °F and 75 °F)
- 3 tablespoons oil (between 65 °F and 75 °F)
- 2 large eggs (room temperature)

- 3 tablespoons sugar
- 2 1/4 teaspoons xantham gum
- 3/4 teaspoon salt

European-Style Coffee Cake (AR)

1) Beat all ingredients for cheese filling in large bowl of electric mixer until fluffy

- 8 oz. cream cheese
- 1/3 cup granulated sugar

- 1 teaspoon lemon zest, optional
- 1 large egg yolk
- DOUGH
- 1 cup skim milk or 2% milk, heated to 110 F
- 1 packet (1/4 oz.) active dry yeast granules
- 2 cups Brown Rice Flour Mix
- 1/4 cup granulated sugar, separated

- 1 teaspoon xantham gum

- CRUMB TOPPING
- 3/4 cup (122 g) Brown Rice Flour Mix
- 1/2 cup granulated sugar
- 1/2 teaspoon xantham gum
- 1/3 cup unsalted butter, cold & diced
- FILLING
- 6 cups thinly sliced tart apples
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tablespoon corn starch
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter
Fruit Pie (AR)

1) Preheat oven to 375°F
- 1 9" traditional pie crust
- 6 cups of berries OR peeled and sliced fruit
- 3-4 - 1 cup of sugar, depending on sweetness of fruit (use granulated sugar or a combination of granulated and brown sugar.
- 1-3 tablespoons corn starch, depending on moisture content of fruit (fresh berries and peaches will need more for instance)
- Cinnamon, nutmeg, and/or ginger to taste
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
English Muffins (AR)
