Grandma Betty's Salsa Canning

Start with "Tomato Canning Recipe" base
- 4 quarts tomatoes, peeled and chopped (use jars from tomato canning recipe base)
- 4 cloves garlic, minced
- 2 medium onions, chopped (one yellow & one red)
- 2 red peppers, chopped
- 2 green peppers, chopped
- 2 banana pepper, chopped
- 1/2 c. white vinegar
- 1/2 c. balsamic vinegar
- 2 bunches green onion, chopped
- 3 fresh limes, juiced
- 1 bunch fresh cilantro, finely chopped
- 1 jalapeno pepper, seeded and chopped fine
- 2 tsp. chili powder
- 6 cans tomato paste
- season to tast with salt
Lemony Asparagus with Pine Nuts & Parmesan

Heat oven to 350 degrees F
- 2 Tbsp pine nuts
- 2 Tbsp olive oil
- 2 pounds asparagus (2 bunches), trimmed and cut into 2-inch pieces
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 tsp thinly sliced lemon zest
- 1 oz Parmesan, shaved

Anita's Apple Pie Slices

According to Jane, "This recipe is one that my mom used to make quite often
- Crust:
- 2 Cups flour
- 3/4 Cup shortening
- 1 tsp. salt
- 1 egg yolk, lightly beaten
- 1/2 Cup milk
- Filling:
- 5 Cups sliced, peeled apples (6-7 good sized apples)
- 1 Cup sugar (more sugar may be needed if your apples are tart) we used 3/4 Cup sugar and 1/4 Cup VANILLA SUGAR
- 2 TB. flour
- 1/2 tsp. PENZEYS CINNAMON
- 1 TB. butter
- 1 egg white, lightly beaten
- double or triple the recipe depending on how much icing you prefer
- Icing:
- 1 TB. butter, melted
- 3/4 Cup powdered sugar
- 1/4 tsp. PURE VANILLA EXTRACT
- 2-3 tsp. milk

- 1 cup fresh flat-leaf parsley

- 1 lb prepared pizza dough, at room temperature

Classic Eggnog Recipe

- 1 1/2 c granulated sugar
- 1 qt (4 cups) heavy cream
- 2 c whole milk
- 2-3 c dark rum, bourbon or brandy (optional)
- 2 Tbsp vanilla extract (optional)
- ground nutmeg or cinnamon to taste

- 1/4 cup olive oil

- 4 cups fresh asparagus, trimmed and cut in 1/2-inch pieces
- 2 cups water, divided
- 1/4 cup finely chopped green onions or 1 teaspoon onion powder
- 5 tablespoons butter
- 5 tablespoons all-purpose flour
- 1/2 to 1 teaspoon salt
- 1/4 teaspoon white pepper
- 4 cups milk
- 1 tablespoon chicken bouillon granules
