Ingredients

  • Dressing:

  • 3

    tablespoons fresh lemon juice

  • 1

    tablespoon sugar

  • 1/4

    cup olive oil

  • 3

    tablespoons honey

  • 2

    teaspoons chia seeds

  • Salad:

  • 8

    mandarin oranges or Clementines, peeled and segmented

  • 4

    apples, such as Gala, diced

  • 5

    kiwis, peeled and diced

  • 4

    bananas, peeled and diced

  • 1 1/2

    cups pomegranate seeds

Directions

Make dressing: In a mixing bowl or jar, whisk together lemon juice and sugar until dissolved. Mix in olive oil, honey and chia seeds. Mix salad: In a salad bowl, toss together all the fruits and then pour dressing over the top and gently toss to coat. Serve immediately.
