- •4 large chicken breasts
- •1 tablespoons olive oil
- •4 large white or cremini mushrooms, sliced
- •½ red bell pepper, diced
- •½ green bell pepper, diced
- •¼ white onion, diced
- •½ cup shredded pepper jack cheese
- •4 teaspoons cajun seasoning*

- 20 chicken wings, split and tips discarded
- 1/2 cup butter, melted
- 1/2 cup red pepper sauce
- 3/4 cup tomato sauce

- 4 cups low-sodium chicken broth
- 1 (14.5 oz) can petite diced tomatoes
- 1 (14.5 oz) can crushed tomatoes
- 2 1/2 Tbsp tomato paste
- 1 3/4 tsp dried basil
- 3/4 tsp dried oregano
- 1/2 tsp dried rosemary, crushed
- 1/2 tsp fennel seeds, crushed
- 1/2 tsp dried thyme
- 1 tsp granulated sugar
- 1 1/2 Tbsp chopped fresh parsley, plus more for garnish
- Salt and freshly ground black pepper, to taste
