Irish Beef & Guinness Stew

Guinness Beer is a dark-colored, rich Irish beer and it is the key flavoring for the sauce of this stew
- 2 tablespoons olive oil
- 2.5 pounds beef chuck, brisket, or any other bone-less, slow-cooking beef
- 3/4 teaspoon salt
- black pepper to taste
- 3 garlic cloves, minced
- 2 onions, chopped
- 6-ounces bacon, speck, or pancetta, diced
- 3 tablespoons plain flour
- 1 (14.9-ounce) can Guinness Beer
- 4 tablespoons tomato paste
- 3 cups chicken stock/broth
- 3 carrots, peeled, and cut into 1/2-inch thick pieces
- 2 large celery stalks, cut into 1-inch pieces
- 2 bay leaves
- 3 sprigs thyme or 1 teaspoon dried thyme leaves
- creamy mashed potatoes to serve
Heloise Angel Biscuits

Dissolve the yeast in warm water and set aside
- 1 pkg. dry yeast
- 1/4 cup warm water
- 2 1/2 cups flour
- 1/2 tsp baking soda
- 1 tsp. salt
- 1/8 cup sugar
- 1/2 c. shortening
- 1 cup buttermilk

l. Brown pork chops in their own fat in large skillet; remove and set aside; drain all but 2 Tbsp
- 6 Pork chops, rib or loin cut 1/2" thick
- 1 cup diced celery
- 1 med. onion, chopped--about 1/2 cup
- 2 tsp. chili powder
- 1 can red kidney beans
- 1 can whole kernel corn
- 1 cup rice
- 1 can tomato soup
- 1 soup can water
- 1 1/2 tsp. salt
- 1 tsp leaf oregano
- 1/4 tsp. pepper
Ronzoni Wedding soup

In medium bowl, combine beef, egg, bread crumbs, Parmesan, basil and onion powder
- 1/2 lb. lean ground beef
- 1 lg. egg, slightly beaten
- 2 Tbsp. fine dry bread crumbs
- 1 Tbsp. grated Parmesan cheese, plus more for serving
- 1/2 tsp. dried basil leaves
- 1/2 tsp. onion powder
- 1 46 ounce can chicken broth
- 2 cups spinach (or escarole)
- 1/2 cup orzo, uncooked
- 1/3 cup finely chopped carrot
Grilled Salmon Skewers

- 1 pound salmon filet without skin
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tablespoon rice vinegar
- 1 teaspoon minced fresh ginger root
- 1 clove fresh garlic, minced
- pinch of freshly ground black pepper
- 12 fresh lemon wedges

- 1 small onion, chopped
- 1 Tbsp. flour

- 1/2 cup Swiss cheese
