Mediterranean Marinated Cheese

Cube cream cheese into about 26 pieces
- 1 8 oz pkg. cream cheese
- 1/2 c. Kraft sun-dried tomato vinaigrette dressing
- 2 cloves garlic, sliced
- 3 small sprigs fresh rosemary, stems removed
- 6 sprigs fresh thyme, cut into pieces
- 1 tsp. Black peppercorns.
- peel of 1 lemon, cut into tin strips

- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt

- 2 teaspoons finely shredded lemon peel

Chicken Soup with Chervil and fresh lemon juice

In pot over med-low heat, heat oil and onion, celery, carrots and parsley, seasoning with salt and pepper
- 3 TBSP. olive oil
- 1 med. onion, chopped
- 4 celery ribs, chopped
- 4 carrots, peeled and chopped
- 2 TBSP. freshly minced parsley
- coarse salt and cracked black pepper to taste
- 1 tsp. fines herbs. you can make your own or buy it at grocery store.
- (1 tbsp. chopped tarragon, 1 tbsp. chopped chervil, 1 tbsp. chopped chives, 1 tbsp. chopped parsley)
- 1 tsp. chervil
- 2-3 skinless, bone-in chicken breasts
- 6 cups chicken stock or broth
- 1 cup dry white wine
- 8 oz. wide egg noodles or 1 cup orzo
- juice of 1 lemon
- fresh parsley, optional, for garnish
Spaghetti with clams

Bring a lg. pot of lightly salted water to boiling
- 4 slices bacon, diced
- 2 Tbsp. olive oil
- 4 cloves garlic, sliced
- 1 bag, (9 oz) baby spinach
- 1 lb. thin spaghetti
- 2 cans minced clams in juice, undrained
- 1/4 tsp. red pepper flakes
- juice of 1/2 lemon
Scalloped Potatoes

1. heat oven to 425. 2. melt butter in a large, heavy pot over medium-high heat
- 2 Tbsp. unsalted butter
- 1 medium onion, minced
- 2 garlic cloves, minced
- 1 Tbsp. fresh thyme, chopped
- 1 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 1/2 pounds russet potatoes, peeled and sliced 1/8 inch thick. use a mandoline if you have one.
- 1 cup chicken or vegetable broth
- 1 cup heavy cream
- 2 bay leaves
- 1 cup shredded cheddar cheese.
- variations...add 2 chps diced ham at the end of step 3.
Vegan Creamy cauliflower soup

Using a lg. saucepan over medium heat, heat the oil
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 2 leeks, diced, white part only
- 1 head cauliflower, chopped
- 6 cups vegetable broth
- juice of 1/2 lemon
- 1 Bay leaf
- 1 tsp. fresh thyme leaves
- 1/3 cup raw unsalted cashews, pine nuts or almonds.
- kosher salt and fresh black pepper.
- freshly grated nutmeg for garnish
Cheese Ball/Hidden Valley Ranch

Soften cream cheese, add all ingredients, except pecans
- 1/4 c. green onion
- 1/4 cup celery
- 1/4 c. green pepper
- 1 pkg. hidden valley ranch. (3 Tbsp.)
- 2 8-oz pkgs. cream cheese.

- 3 lbs. russet or baking potatoes, cubed--about 1/2"
- 1 large sweet onion, chopped
- 1 cup celery, chopped
- 3-4 garlic cloves, chopped
- 1 qt. chicken broth or stock
- approx, 16 oz lean cooked ham cubed
- 1/2 cup butter
- 2 tsp. salt
- pepper to taste
