Using a large sauce pan over medium hat, heat the butter
- 3 tbsp. unsalted butter
- 4 ounces button mushrooms, sliced
- 1 cup sliced celery
- 1 cup shredded carrots, about 2 medium
- 1 medium onion, chopped
- 3 Tbsp. flour
- 6 cups chicken stock
- 1 1/2 cups half and half
- 2 Tbsp. chopped fresh parsley
- 1 1/2 lbs. boneless,skinless chicken breast, cut into 1/2 inch pieces
- 1 cup penne pasta, cooked according to package directions.
- 1/4 lb. sugar snap peas, halved diagonally
- 3 Tbsp. fresh lemon juice
- grated parmesan cheese for serving--optional

1. Heat a large pan over medium heat, and add olive oil
- 2 Tbsp. olive oil
- 1 small yellow onion, diced (about 1 cup)
- 1 Tbsp. minced garlic (2 cloves)
- 2 fifteen and a half ounce cans white beans, drained and rinsed
- 6 cups (about 8 ounces) spinach, stems trimmed.
- 4 tsp. white-wine vinegar
- 2 Tsp. fresh thyme leaves, plus sprigs for garnish
- 1/4 tsp. freshly ground black pepper
