Easy Chicken Stroganoff

- 2 Tbsp margarine or butter
- 1 lb. skinless, boneless chicken breasts, cut into strips
- 2 cups sliced fresh mushrooms (about 6 oz)
- 1 medium onion, chopped (about 1/2 cup)
- 1 can (10 3/4oz) Campbells condensed cream of chicken soup
- 1/2 cup sour cream or plain yogurt
- 4 cups hot cooked medium egg noodles (about 4 cups dry)
- Chopped fresh parsley, paprika, orange peel curls and fresh oregano sprigs for garnish
Fire & Ice Tomatoes

In a large bowl, combine the tomatoes and onion; set aside
- 5 large tomatoes, cut into wedges
- 1 medium onion, sliced
- 3/4 cup white vinegar
- 6 Tbsp sugar
- 1/4 cup water
- 1 Tbsp mustard seed
- 1/4 tsp cayenne pepper
- 1 large cucumber, sliced
Chocolate Peanut Butter Parfaits

IN a small bowl, combine peanut butter and 2 Tbsp milk
- 2 Tbsp reduced fat chunky peanut butter
- 2 Tbsp plus 2 cups cold fat free milk, divided
- 1 cup plus 6 Tbsp reduced fat whipped topping, divided
- 1 pkg (1.4oz) sugar free instant chocolate fudge pudding mix
- 3 Tbsp finely chopped salted peanuts
Savory Pork Roast

- 2 tsp dried rosemary, crushed
- 2 tsp salt
- 1 1/2 tsp dried oregano
- 1 1/2 tsp dried thyme
- 1 1/2 tsp rubbed sage
- 1/4 tsp ground nutmeg

- 1 bone-in pork loin roast (5 lbs)
- 1 cup sliced onion
- 1 cup sliced carrots
Roasted Carrots with Feta and Parsley

Preheat oven to 425. Toss carrots with oil on a rimmed baking sheet, and season with salt and pepper
- 3 lbs medium carrots, cut 1/2 inch thick on the bias
- 3 Tbsp extra virgin olive oil

- 1/3 cup crumbled feta cheese
- 2 Tbsp chopped fresh flat leaf pepper
Marinated Citrus Shrimp

Combine shrimp, orange segments, pineapple chunks and green onions in resealable food storage bag
- 1 lb (about 32) large shrimp, peeled, tails left intact and cooked
- 2 oranges, peeled and cut into segments
- 1 can ( 5 1/2oz) pineapple chunks in juice, drained and 1/4 cup juice
- reserved
- 2 green onions, sliced
- 1/2 cup orange juice
- 2 Tbsp minced fresh cilantro
- 2 Tbsp lime juice
- 2 Tbsp white wine vinegar
- 1 Tbsp olive or vegetable oil
- 1 clove garlic, minced
- 1/2 tsp dried basil
- 1/2 tsp dried tarragon

Honey Fried Chicken

- 1 cup fresh breadcrumbs (3 slices white bread)
- 1/2 cup grated parmesan cheese
- 4 chicken cutlets (about 6 oz each), pounded to an even 1/4 inch thickness
- 4 Tbsp olive oil
- 1 Tbsp butter
- 1/4 cup dry white wine
- 1/2 cup reduced sodium chicken broth
- 1 Tbsp fresh lemon juice
Louisana Chicken and Pasta

Cook gemelli to desired doneness as directed on package
- 8 oz (2 cups) uncooked gemelli (pasta twists)
- 4 slices bacon, cut into 1/2 inch pieces
- 2 boneless skinless chicken breast halves, cut into 1/2 inch pieces
- 1 cup diced red bell pepper
- 1 medium onion, finely chopped (1/2 cup)
- 1 (15oz) can black-eyed peas or garbanzo beans, drained (used garbanzo beans)
- 1/2 cup Progresso chicken broth
- 2 Tbsp Worcestershire sauce
- 1/2 tsp garlic pepper blend
- 1/2 tsp dried thyme leaves
- 1/8 tsp ground red pepper (cayenne)
- 2 Tbsp chopped fresh parsley, if desired
