heat oven to 400. in a small bowl combine all ingredients except chicken and broth
- 1/4 cup olive oil
- 6 cloves garlic, minced
- 2 tbsp. chopped fresh thyme
- 2 tsp chopped fresh tarragon
- 2 tbsp. fresh lemon juice
- 1 tsp salt
- 1/2 tsp pepper
- 3 1/2 lb thin-sliced boneless skinless chicken breasts or tenders
- 1/2 cup reduced sodium chicken broth
Lamb Ragout with Olives and Peppers

Preheat the oven to 250°
- 1/4 cup canola oil
- 4 pounds boneless lamb shoulder, cut into 2-inch chunks
- Salt and freshly ground black pepper
- 2 large white onions, coarsely chopped
- 4 celery ribs, coarsely chopped
- 3 carrots, coarsely chopped
- 1/4 cup tomato paste
- 1 cup dry red wine
- 10 cups water

- 3/4 cup sliced pitted Picholine olives

Cut the chicken breast halves horizontally, butterflying them open
- 2-4 boneless, skinless chicken breast halves (1 1/2 pound total)
- 2 tablespoons grated Parmesan cheese
- 1/3 cup flour
- Salt and pepper
- 4 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup chicken stock or dry white wine
- 3 tablespoons lemon juice
- 1/4 cup brined capers
- 1/4 cup fresh chopped parsley
Cedar Planked New York Steak with Rosemary and Honey

Combine marinade ingredients in mixing bowl
- For the steak
- 4 Double R Ranch New York steaks (10 ounces each)
- 4 each, small Cedar Planks, soaked in water for 2-4 hours prior to using
- Kosher salt for seasoning steak prior to grilling
- Fresh ground black pepper for seasoning steak prior to grilling
- For the Marinade
- 1/2 cup extra virgin olive oil
- 4-5 sprigs fresh rosemary, leaves only
- 1/2 Tbs crushed red chile flakes
- 1/2 Tbs fennel seed, finely ground
- 6-8 cloves garlic, minced
- Zest of 2 lemons
- For the Honey Rosemary Sauce
- 2 Tbs honey
- 2 sprigs fresh rosemary, chopped
- 1/4 cup cider vinegar
- Cooking juices (reserved from steak while resting)
- 1 garlic clove, sliced finely
- Pinch Kosher salt
- Pinch fresh ground black pepper
- 1/2 cup Arbequina extra virgin olive oil

- 1/2 cup fresh cilantro leaves

- 14 oz canned tomatoes (you can substitute 14 oz freshly chopped tomatoes + their juice)
- 1/4 tsp ground cinnamon
- 1 tbsp garam masala
- 1/2 tsp chili powder
- 1 tsp brown sugar
- 1 1/4 cups cream or milk
- 1 tbsp cilantro leaves

- 1 cup previously grilled or sauteed shrimp, chopped
- I had 8 jumbo shrimp that was simply seasoned with salt, pepper, smoked paprika and Cayenne pepper, then grilled for 3 minutes per side on the outdoor grill that was brushed with oil.
