French Onion Chicken Bubble Up

Preheat oven to 350 degrees Lightly spray a 9x13-inch pan with cooking spray
- 2 cups cooked chopped chicken
- 1 (10.75oz) can Cream of Chicken Soup
- 8 oz refrigerated French Onion Dip
- 1 cup shredded cheddar cheese
- 1 (12oz) can refrigerated Grands Jr biscuits
- 1/4 cup French fried onions
Creamy Chicken Tortilla Soup

Start by roasting the chicken breasts on a heavy baking sheet sprayed with Pam or coated with parchment paper
- 3 tbsp. butter
- 1 tsp. minced garlic
- 1 medium onion finely chopped
- 2 tbsp. flour
- 3 cans chicken broth
- 1 quart half-and-half (or 4 cups)
- 1 can cream of chicken soup
- 1 cup hot salsa
- 4 large boneless chicken breasts cooked
- 1 can black beans
- 1 can kidney beans
- 1 can corn
- 2 tsp. cumin
- 1 pkg. fajita seasoning
- 1 pkg. shredded cheese (I used a blend of cheddar and monterey jack)
- 4 corn tortilla's and a little vegetable oil for frying
The Perfect Prime Rib

The butcher knows how much fat to leave on the roast, so no additional trimming is needed
- A bone-in prime rib roast
- 3medium3 medium onions, thickly sliced
- 1teaspoon1 teaspoon Kosher or coarse sea salt per pound of roast
- 1/2teaspoon1/2 teaspoon freshly ground black pepper per pound
- 1teaspoon1 teaspoon minced garlic per pound
- 1teaspoon1 teaspoon fresh rosemary per pound
- 1teaspoon1 teaspoon fresh thyme per pound
- 1/2teaspoon1/2 teaspoon olive oil per pound
- Place a flat roasting rack inside a roasting pan large enough to fit your roast, and spread the onions on top of the rack. It’s ok if you don’t have a roasting rack--resting the roast directly on the onions works also. Place the roast in the pan.
- Mix the salt, pepper, garlic, herbs and olive oil in a bowl until well-combined. Use your hands to rub the roast all over with the marinade mixture, coating the surface evenly.
- After 30 minutes in the oven, add a 1/2 cup of water to the bottom of the roasting pan. The key is to allow the onions to brown and caramelize while roasting, but not to burn and smoke in the fat.
- If the top of the roast starts to char, put a small piece of foil to lightly cover the top, leaving the sides exposed. Again, turn the roast 180 degrees if needed for even roasting.
- remember that the meat thermometer is your guide and that the roast will continue to cook a bit while it rests on the kitchen counter!
- When ready, set your prime rib on a cutting board or serving platter, and lightly cover it with a piece of aluminum foil to rest for 15 to 20 minutes.
- . If it suits your fancy, you can also serve some horseradish alongside.

- 1 avocado, mashed
- 5 tablespoons buttermilk
- 1/4 teaspoon salt
- 3 (5-oz.) cans solid white tuna in water, drained $
- 1 large egg, lightly beaten $
- 1/3 cup sliced green onions
- 1 1/4 cups seasoned panko (Japanese breadcrumbs)

- 4 cloves garlic (cut in half)
- 1 tablespoon chopped fresh rosemary leaves
- 2 teaspoons chopped fresh oregano

- 1/4 cup olive oil
Grilled Marinated Tuna with Herb Butter

In small bowl, combine oil, soy sauce, lemon juice, zest and garlic

- 1/3 1/3 1/3 cup soy sauce
- 1/4 1/4 1/4 cup fresh lemon juice
- 1 1 1 teaspoon lemon zest
- 1 1 1 garlic clove, minced
- Prepare Herb Butter and set aside.
- Herb Butter
- 3/4 3/4 3/4 cup margarine or butter, softened
- 2 2 2 tablespoons minced green onion
- 2 2 2 tablespoons minced fresh parsley
- 1 1 1 tablespoon minced fresh tarragon
- 1 1 1 teaspoon Dijon mustard
- to small bowl, combine margarine, green onion, parsley, tarragon and mustard. Set aside for flavors to blend. Serve over tuna steaks.

- 1/2 teaspoon ground cinnamon
- 1 and 2/3 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- Pumpkin Cream Cheese Frosting
- 4 oz cream cheese, softened to room temperature
- 2 Tablespoons unsalted butter, softened to room temperature
- 1/4 cup pumpkin puree
- 1 teaspoon ground cinnamon
