Old Fashioned Lasagne

Serves 8-10
- FOR WHITE SAUCE:
- 4 1/2 oz chopped pancetta
- 2 onions peeled and chopped
- 1 clove garlic, peeled and chopped
- 1 carrot peeled and chopped
- 2 sticks celery trimmed and chopped
- 3 lb 5oz ground beef
- 1 tbsp soy sauce
- 2 tbsp worcestershire sauce
- freshly ground black pepper
- 13 fl oz full fat milk
- 1 1/2 oz butter
- 14 fl oz beef stock
- 8 fl oz dry red wine
- 14 oz tomato puree
- handful fresh basil, finely chopped
- 8 fresh lasagne sheets
- 5 1/2 oz parmesan cheese, freshly grated
- 4 1/2 oz butter
- 4 oz flour
- 2 1/4 pt hot milk
- salt and freshly ground pepper
Mouth Watering Garlic Baked Fish

1 Rinse and dry fish and put into a baking pan that has been sprayed with nonstick cooking spray
- fish fillets - desired amount or whole fish
- nonstick vegetable spray (pam)
- 1/4 c brandy or apple juice
- 1/2 c onion flakes
- 1/4 c oil or melted butter (i used butter)
- 1/4 c lemon juice
- 1/4 c soy sauce
- 4 clove garlic, minced
- 2 Tbsp worcestershire sauce
- salt and pepper to taste
- lemon slices
- paprika and/or parsley
Goat Cheese Spread with Herbs & Olive Oil

Put the goat cheese, cream, olive oil, and wine in a food processor (or mix in a bowl with a wooden spoon)
- 8 oz. goat cheese (about 1 cup)
- 2 Tbs. heavy cream, more if needed
- 2 Tbs. extra-virgin olive oil, more for drizzling
- 2 Tbs. dry white wine
- Kosher salt and freshly ground black pepper
- 2 Tbs. chopped fresh herbs (choose at least two from the following: parsley, chives, tarragon, dill)
- 1 Tbs. finely grated lemon zest
- Good crackers or slices of walnut bread
- 1 About 1 pint cherry tomatoes
- 1 celery heart, cut into sticks
Berry Chocolate Streusel Bars

Make the Streusel: 1.Preheat the oven to 350 degrees F
- For the Streusel Layers:
- 1 3/4 cups all purpose flour
- 1 cup confectioners (powdered) sugar
- 3/4 cup (the best quality you can find!) unsweetened cocoa powder
- 1/4 teaspoon kosher salt
- 1 cup (2 sticks) unsalted butter, cold and cut into small cubes
- For the Custard Layer:
- 2 large eggs
- 3/4 cup granulated sugar
- 6 ounces plain Greek yogurt (I used Chobani 0%)
- 6 tablespoons all purpose flour
- 1 tablespoon orange juice
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 2 cups frozen mixed berries
- For Garnish:
- fresh berries (such as strawberries, blackberries, raspberries, and blueberries)
- confectioners (powdered) sugar
Meatballs Stroganoff

I start off with our favorite brand of frozen Italian style meatballs (my kids LOVE the Rosina brand)
- Frozen Italian style meatballs (1/2 oz each)
- generally, enough to cover the bottom of the pan. Depends on who is home.
- Extra virgin olive oil
- 1 + Tbsp just enough to brown up the meatballs.
- 2 cups beef broth
- use more for more meatballs... just go with this recipe. Don't over think it.
- Seasoning
- kosher salt and black pepper to taste
- dried herbs (probably at least 1 1 1/2 tsp each) parsley, oregano, basil
- it will look like a lot of seasoning, but in the end, it will be great!
- 2/3 1 cup sour cream
- 1 cup heavy whipping cream
- Wide egg noodles
- enough for whoever is there.
Brownie Cookie Pie

Heat oven to 350°F. Spray 9-inch springform pan with cooking spray
- 1 box (1 lb 2.3 oz) Betty Crocker® fudge brownie mix
- Vegetable oil,
- water and eggs called for on brownie mix box
- 1 pouch (1 lb 1.5 oz) Betty Crocker® chocolate chip cookie mix Butter and egg called for on cookie mix pouch
- Caramel topping or sauce
Garlic Parmesan Crusted Salmon Recipe (Oven and Air Fryer version)

Instructions Start by preheating the oven to 400 degrees F
- Ingredients
- 1 lb salmon I used Atlantic salmon
- 1/4 black pepper
- 1/4 cup plain breadcrumbs
- 1/4 cup shredded Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 2 tablespoons unsalted butter melted
- 2 teaspoons minced garlic

Preheat oven to 200°C | 400°F
- For The Chicken:
- 1 large egg
- 2 tablespoons lemon juice (or juice of 1/2 a lemon)
- 2 teaspoons minced garlic
- 1/2 tablespoon fresh chopped parsley
- 1/2 teaspoon each salt and pepper , to season
- 1/2 cup breadcrumbs
- 1/3 cup fresh grated parmesan cheese
- 4 skinless , boneless chicken breasts (or thighs)
- For The Veggies:
- 8-10 (1 pound | 500 g) baby potatoes, quartered
- 1/2 cup butter , melted
- 2 teaspoons minced garlic
- salt to taste

INSTRUCTIONS SHRIMP: Heat a swish of oil in a large skillet over medium heat
- shrimp:
- 1 lb. large shrimp
- salt, pepper, and olive oil for the pan
- pomodoro sauce:
- 4 cloves garlic
- 4 cups diced fresh tomatoes or halved cherry tomatoes
- 2 cups chicken or vegetable broth
- 4 tablespoons butter
- 1/2 cup fresh basil leaves, cut or torn into small pieces
- salt to taste
- pasta:
- 8 ounces DeLallo capellini
- Parmesan cheese for topping
