  • 3 oz fresh ginger, peeled and sliced thickly
  • 2 cloves garlic, crushed
  • 2 tbsps butter
  • 2 stalks of lemongrass
  • 1 fresh bay leaf
  • Peel from 1/2 a lime
  • 1 cup white wine
  • 3/4 cup San Marzano tomatoes
  • 6 cups chicken stock
  • 2 cups of coconut milk
  • For the glaze
  • 1/2 cup sorghum syrup
  • 1 tbsp Madras curry powder
  • 1 tsp dry mustard
  • 1 lime, juiced
  • 1 tsp butter
