STRAWBERRY SHORTCAKE CAKE ROLL

Preheat oven to 350°F. Line a 10×15” or 10
- FOR THE CAKE:
- 3 large eggs
- 3/4 cup granulated sugar
- 1 tablespoon vegetable oil
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup all purpose flour
- Powdered sugar, to aid in rolling
- FOR THE FILLING AND TOPPING:
- 8 ounces Challenge cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- 2 cups cold heavy whipping cream
- 1 pound fresh strawberries (plus more for topping, if desired)
CREAMY GARLIC SHRIMP ALFREDO PASTA

INSTRUCTIONS In a medium sized skillet over medium high heat add shrimp and olive oil
- GREDIENTS
- 1 pound large shrimp, peeled, deveined and tails removed
- 1 Tablespoon olive oil
- salt and pepper
- 16 ounce fettuccini noodles
- ½ cup butter
- 1 pint heavy whipping cream (2 cups)
- 4 ounces cream cheese
- ½ teaspoon minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup grated parmesan cheese
Italian Sausage Baked Pasta

Preheat oven to 350°F. Put a large pot of water on to boil
- 1 package Mild Italian Turkey Sausage (6 links) (~1 to 1 1/2 lbs)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 large red pepper, chopped
- 1 jar (798 mL) of your favorite jarred pasta sauce
- 3/4 cup chili sauce (in the ketchup dept)
- 1 tsp each basil & oregano
- 500 g of penne pasta
- 2 1/2 cups grated mozzarella cheese
- 1 cup grated parmesan cheese

Melt butter in a heavy pot over medium heat
- 1 cup butter
- 2 cups thinly sliced shallot
- 4 –5 stalks celery, diced
- 2 red bell peppers, seeded and diced
- 8 ounces portabella mushrooms, chopped
- 2 tablespoons garlic paste
- 1/3 cup all-purpose flour (more if you prefer thicker)
- Several turns of freshly ground black pepper
- 1 tablespoon white pepper
- 6 cups milk
- 6 cups half & half
- 3 tablespoons fresh thyme leaves (or 1 teaspoon dried)
- 5 10-ounce cans clams with juice
- Salt, to taste
- 8 slices bacon, cooked and crumbled
Slow Cooker Black Bean Taco Chili

To the bowl of a 5-6 quart slow cooker, add raw chicken breasts, beans, vegetables, spices and chicken broth
- 1 1/2 lb chicken breast, trimmed of fat
- 15 oz corn, drained
- 15 oz black beans, drained and rinsed well
- 15 oz petite diced tomatoes, drained
- 1 C yellow onion, chopped
- 1 C green bell pepper
- 1 jalapeño, diced
- 3 cloves garlic, minced
- 2 tsp salt
- 1 tsp ground black pepper
- 1/8 - 1/4 tsp red pepper flakes, optional
- 1 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- 2 1/2 - 3 C chicken broth
- Monterey Jack cheese, shredded
- Tortilla chips

- 18 oz marinara sauce
- 18 oz water
- 1/3 cup half and half
- 1/3 cup mozzarella cheese
Stuffed Pizza Rolls

Preheat oven to heat specified on pizza dough package
- 1 roll refrigerated pizza dough* (or make your own)
- marinara/pizza sauce (click here to make your own)
- 2 T grated Parmesan cheese (sorry, I don’t know how to make that)
- 1 T olive oil or melted butter
- 1/2 t garlic powder
- 1 t dried Italian seasoning
- mozzerella cheese
- Pizza toppings of your choice: ie, ham and pineapple, pepperoni slices, sausage, etc.
- You can use regular pizza dough, or thin crust. I used thin crust when taking these pictures.

1. Heat oil in a large soup pot or Dutch oven (8-quart or larger) over medium heat
- 2 tablespoons extra-virgin olive oil
- 2 cups chopped onions (2 medium)
- 2 cups chopped celery (4 medium stalks)
- 1 cup chopped green bell pepper (1 medium)
- 4 cloves garlic, minced
- 3 cups chopped cabbage
- 3 cups chopped cauliflower (about 1/2 medium)
- 2 cups chopped carrots (4 medium)
- 2 cups green beans, cut into 1-inch pieces, or frozen, thawed
- 8 cups low-sodium vegetable broth or chicken broth
- 2 cups water
- 1 15-ounce can tomato sauce
- 1 14-ounce can diced tomatoes
- 1 15-ounce can kidney or pinto beans, rinsed
- 1 bay leaf
- 4 cups chopped fresh spinach or one 10-ounce package frozen chopped spinach, thawed
- 1/2 cup thinly sliced fresh basil
- 10 tablespoons freshly grated Parmesan cheese

- 3 tbsp. tomato paste
- 1 tsp. crushed red pepper flakes
- 1 15-oz can diced or crushed tomatoes
- 6 c. low-sodium chicken broth
- 8 oz. penne
- 12 oz. breaded chicken (cooked and cut into 1" pieces) or cooked boneless skinless chicken breasts (cubed)
- 1 1/2 c. shredded mozzarella
- 1 c. freshly grated Parmesan, plus more for garnish
- 1 tbsp. freshly chopped parsley, plus more for garnish
- kosher salt
