Lemon Garlic Chicken

Instructions Debone the chicken thighs but keep the skin on
- Ingredients:
- 20 oz or 4 chicken thighs, deboned but skin on
- sliced lemon, for garnishing
- Marinade:
- 3 cloves garlic, minced
- 2 1/2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoon olive oil
- 1 tablespoon honey
- 1/4 teaspoon paprika
- 1/4 teaspoon chili flakes
- 1/4 teaspoon ground cumin, (optional)
- 1 pinch salt
- 3 dashes ground black pepper
- 1 tablespoon chopped Parsley leaves
Mushroom Cream Sauce with Linguine

Cook the pasta according to package directions reserving 1 cup of the cooking liquid
- 1 pound of pasta (linguine is our favorite for this)
- 1 cup reserved pasta cooking water
- 3 Tablespoons olive oil, divided, (2T plus 1T)
- 4 cups chopped cremini or mixed mushrooms
- 1 Tablspoon minced fresh rosemary
- 1 teaspoon minced fresh thyme
- pinch of red pepper flakes
- 2 teaspoons shoyu
- salt and pepper to taste
- 2 Tablespoons margarine
- 3 cloves garlic, minced
- 1/2 small onion, minced (1/3 cup)
- 3 Tablespoons all purpose flour
- 1 Tablespoon nutritional yeast
- 4 Tablespoons white wine
- 1 1/2 cups unsweetened almond milk (I recommend not subbing w. another non dairy milk)
- salt and pepper to taste
Sausage Pepper Fettuccini Skillet

1.Cook pasta in salted water according to the package instructions
- 8-12 oz. fettuccine pasta
- 2 Cups sweet bell pepper (about 2 peppers), stem, seeds & membrane removed, chopped into 1 inch pcs
- 3/4 Cup onion, peeled, diced (about 1 medium onion)
- 2 Cups smoked sausage (12-16 oz), sliced to 1/3 inch pieces; about 4 links
- 1/3 cup chopped parsley
- 3/4 cup heavy cream
- 1 cup pasta water + 3-5 bullion cubes or 1 cup broth
- 1 Tbsp chopped/pressed garlic
- 1/2 cup cherry tomatoes, split in half
- Olive oil

Directions: In a medium bowl, whisk 5 cups of flour, baking soda, and baking powder; set aside
- For the Cookies:
- 6 cups flour, divided
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup butter, at room temperature
- 2 cups granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups light sour cream
- For the Frosting:
- 1 cup butter, at room temperature
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 6 tablespoons heavy cream
- Several drops food coloring
- Sprinkles
Steak Fajitas

Yields: 8-10 servings
- 2 pounds skirt steak
- 1/2 cup fresh lime juice
- 1/4 cup plus 1 tablespoon extra-virgin olive oil, divided
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic salt
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 2 orange bell peppers, sliced
- 1 large yellow onion, sliced
- 20 fajita-size soft flour tortillas
- Garnish: guacamole, sour cream, shredded cheese, salsa
- In a large glass or nonreactive dish, place skirt steak. In a small bowl, whisk together lime juice, 1/4 cup olive oil, cilantro, cumin, and smoked paprika. Pour over skirt steak, turning to coat. Let stand at room temperature for 1 hour.*
