Prepare the pan: Position a rack in the middle of the oven and heat the oven to 350°F
- For the pan:
- 2 Tbs. granulated sugar
- 1/3 cup medium-finely chopped walnuts
- Softened unsalted butter
- For the cake:
- 9 oz. (2 cups) all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. table salt
- 6 oz. (3/4 cup) unsalted butter, completely softened at room temperature
- 1-1/4 cups granulated sugar
- 3 very ripe medium bananas (unpeeled, about 14 oz. total), peeled
- 2 tsp. pure vanilla extract
- 3 large eggs
- 3 oz. (6 Tbs.) buttermilk
- 4 oz. bittersweet chocolate, melted and cooled

- 1/2 small jicama, peeled and cut into small cubes (about 1 1/2 cups)
- 2 scallions, thinly sliced
- 3/4 cup plain yogurt
- 3 tbsp. extra-virgin olive oil
- 2 tbsp. fresh lime juice
- 2 tbsp. rice vinegar
- 1 tsp. sea salt
