Chicken Quesadillas

Super-quick and easy to make, quesadillas make a great weeknight supper
- 6 flour tortillas (8-inch)
- 2 cups cooked chicken, diced
- 2 cups shredded cheese (I use cheddar or Tex-Mex)
- 1/2 cup roasted red pepper, chopped (optional)
- 1/3 cup chopped scallions
- Salsa and sour cream for serving
Savory Bean and Spinach soup

Makes 6 main-dish servings
- 3 14-ounce cans vegetable broth
- 1 15-ounce can tomato puree
- 1 15-ounce can white or Great Northern beans, rinsed and drained
- 1/2 cup converted rice
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried basil, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 8 cups coarsely chopped fresh spinach or kale leaves
- Finely shredded Parmesan cheese
Black Bean Chili

Place pork in a lightly greased slow cooker; add remaining ingredients except garnish
- 1-lb. pork tenderloin
- 3 15-1/2 oz. cans black beans, drained and rinsed
- 16-oz. jar chunky salsa
- 1/2 c. chicken broth
- 1 green pepper, chopped
- 1 onion, chopped
- 2 t. chili powder
- 1 t. ground cumin
- 1 t. dried oregano
- Garnish: sour cream, diced tomatoes

Moist Cheddar-Garlic Oven Fried Chicken Breast

Preheat oven to 350°F. 2 Butter an 11 x 7-inch pan (if using more than 4 breasts use a larger pan)

- (garlic lovers can use more)

Guacamole Avocado Dip

mix all ingredients together
- 3 ripe avocado's diced (I usually use 4)
- 1 rip tomato diced (I usually use 2)
- 1/2 small onion minced or 1/4 of regular sized onion
- juice of 1 lemon
- 1 clove of garlic, minced
- 1/2 tsp of sea salt

Preheat oven to 375°F. Spread tomato halves on a baking sheet
- 1-1/2 lbs Roma tomatoes, halved
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 1 tablespoon fresh thyme, minced
- 1 (28 ounce) can crushed tomatoes
- 2 cups fresh basil leaves, chopped
- 2 tablespoons dried basil
- 1 tablespoon sugar
- 2 cups chicken broth
- salt & pepper to taste
- 2/3 cup heavy cream
