DIRECTIONS Preheat oven to 425º and line a baking sheet with parchment
- 3 medium zucchini, or about 4 cups grated zucchini
- 2 large eggs
- 2 cloves garlic, minced
- 1/2 tsp. dried oregano
- 3 c. shredded mozzarella, divided
- 1/2 c. freshly grated Parmesan
- 1/4 c. cornstarch
- kosher salt
- Freshly ground black pepper
- pinch of crushed red pepper flakes
- 2 tsp. Freshly Chopped Parsley
- Marinara, for dipping

- 1 (16-ounce) package cheese-filled tortellini
- 1/4 cup extra virgin olive oil
- 1 pound fresh white mushrooms, thinly sliced (about 5-1/2 cups)
- 8 ounces small zucchini (about 2) thinly sliced (about 2 cups)
- 1 cup diced red bell pepper
- 1 tablespoon minced garlic
- 2 teaspoon dried oregano
- 1 cup chicken broth or bouillon
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper

Mix pumpkin, milk, cinnamon, ginger, eggs, sugar, salt and cloves together well
- 2 cans of pumpkin
- 3 cups evaporated milk
- 2 tsp cinnamon
- 1 tsp ginger
- 1 yellow cake mix
- 1 cup chopped pecans
- 4 eggs, well beaten
- 1 1/2 cup sugar
- 1 tsp salt
- 1/2 tsp cloves
- 1 stick of butter, melted

- 1/2 cup unsalted butter, room temperature
- 2 tsp. lemon zest or more — zest from 1 large lemon
- 7/8 cup* + 1 tablespoon sugar**
- 1 egg, room temperature
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 2 cups fresh blueberries
- 1/2 cup buttermilk
- 7/8 cup = 3/4 cup + 2 tablespoons
- This 1 tablespoon is for sprinkling on top

Baked French Toast made in muffin cups
- Ingredients:
- 1 loaf French bread, cut or torn into 1/2 inch cubes (about 12 cups of bread)
- 2 1/2 cups milk
- 6 large eggs
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- For the Cinnamon Streusel Topping:
- 1/4 cup cold butter
- 1/4 cup light brown sugar
- 1/4 cup all-purpose Gold Medal flour
- 1/8 teaspoon ground cinnamon
- Pinch of salt
- Butter and Maple Syrup, for serving, optional
