Herb, Garlic and Lemon Rub

In a bowl, blend all of the ingredients
- 1/4 cup extra-virgin olive oil
- 2 garlic cloves, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped parsley
- 1 tablespoon chopped cilantro
- 1 tablespoon chopped chives
- 1 tablespoon finely grated lemon zest
- 1 teaspoon chopped thyme
- 1 teaspoon chopped rosemary
- 1 teaspoon kosher salt
Easy Carrot Cake

Preheat oven to 350. Mix all together and pour into 9 x 13 pan
- FROSTING:
- 2 jars junior carrots ( either 2 4.5oz baby jars or 3 4oz jars)
- 2 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1/2 tsp cinnamon
- 1 tsp salt
- 4 eggs
- 1 cup plus 2 tbs oil
- (raisens or nuts optional)
- 1/4 cup butter
- 1 8oz cream cheese
- 1/2 tsp vanilla
- 3 1/2 cups confectioners sugar

Directions Preheat an oven to 375 degrees F (190 degrees C)
- 18 jumbo pasta shells
- 1 1/2 pounds ground beef
- 2 tablespoons chopped onion
- 1 (12 ounce) can tomato paste
- 1 (14 ounce) can tomato sauce
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 eggs
- 3 cups cottage cheese
- 1 (16 ounce) package shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 tablespoons dried parsley
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper

- 1 can white navy beans, drained and rinsed
- 14.5 oz can fire roasted tomatoes, drained
- 4 cups chicken broth
- 1/4 - 1/2 cup buffalo wing sauce (start with 1/4 cup and add more at end if needed)
- 1 package ranch dressing mix
- 1 cup frozen corn kernels
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon celery salt
- 1/2 teaspoon dried cilantro
- 1/4 teaspoon salt
- 8 oz cream cheese
- Blue cheese crumbles (optional)
Green Bean Casserole with Onion Rings

coat a 1 qt casserole dish with nonstick spray
- Pulse:
- Saute;
- 2 strips thick sliced bacon, diced
- Add;
- 1/2 cup onion, sliced
- 8 oz button mushrooms, quartered
- 8 oz cream cheese, softened
- 4 tbsp. unsalted butter, softened
- 1 tsp Dijon mustard
- 1 tsp garlic, minced
- 1 tsp fresh thyme, minced
- 1 tsp fresh oregano, minced
- 1 tsp fresh lemon juice
- 1/4 tsp Worcestershire sauce
- Melt: whisk in:
- 2 tbsp. unsalted butter
- 2 tbsp. all purpose flour
- slowly add; stir in:
- 1 1/2 cups milk, warmed
- herbed cheese mixture
- salt and pepper to taste
- Combine:
- 1 lb haricot vert, blanched
- sautéed mushroom mixture
- herbed cheese sauce
- Before serving:
- top with the onion ring topping
Grilled Cheese Pull Apart Rolls

Melt the Butter and pour about half of it into the cake pan
- 1 Container of Pillsbury Grands Flaky Layers Biscuits (8 ct.)
- 1-7.5 oz. Container of Pillsbury Buttermilk Biscuits (10 ct.)
- I used two different sizes of Biscuits just for interest, but you can use all the same size Biscuits if you’d like! It will take 2 cans of either size to fill the cake pan.
- 1/2 cup melted Butter..you could leave this out, but the Butter is what makes them taste just like Grilled Cheese! :)
- Velveeta Cheese…approx 3/4 of an entire box. (you will need a 1-2″ cube to stuff into each Roll)
- A 9″ round cake pan

- 3 tbsp. olive oil, more for drizzling
- 1 medium onion, finely chopped
- 3 medium zucchini, halved lengthwise and thinly sliced crosswise

- 2 tbsp. unsalted butter
- 1 lb medium shrimp, shelled and deveined
- 3 garlic cloves, minced
- 3 ripe plum tomatoes, seeded and finely chopped
- 1/2 cup basil, coarsely chopped
- 1 lb fresh or dried fettucine
Grilled Pesto Chicken and Tomato Kebobs

In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth
- 1 cup fresh basil leaves, chopped
- 1 clove garlic
- 1/4 cup grated Parmigiano Reggiano
- kosher salt and fresh pepper to taste
- 3 tbsp olive oil
- 1-1/4 lbs skinless chicken breast, cut into 1-inch cubes
- 24 cherry tomatoes
- 16 wooden skewers

Combine dry ingredients in a large bowl
- Make the Pie dough
- 1 1/2 cups all purpose flour, cold
- 1/2 teaspoon salt, cold
- 1 Tbsp sugar, cold
- 2/3 cup shortening, cold
- 4 Tablespoons water, cold
- Make Cream Cheese Layer
- 8 oz. cream cheese, room temperature
- 1/2 cup sugar
- 1 egg
- 1 tsp lemon juice.
- Make the Pumpkin Layer
- 15 oz. can of pumpkin
- 1 cup sugar
- 1 Tbsp pumpkin pie spice
- 2 eggs
- 1/2 cup evaporated milk
- Topping
- 1 cup pecans, chopped
- 1/2 cup miniature chocolate chips
- 1/2 cup packed brown sugar
- 2 Tbsp pure maple syrup
Homemade Chocolate Pudding with Baileys

- 1/4 cup sugar
- 1/4 cup cornstarch
- 1 1/3 cups milk
- 1 egg yolk
- 1/2 cup heavy cream
- 1/3 cup Baileys Irish Cream
- 1/2 teaspoon pure vanilla extract
- 3 ounces semisweet chocolate, coarsely chopped
