Cream of Mushroom Soup with Buttered Crackers

Heat a drizzle of oil and about half the butter in a pot set over medium-high heat
- drizzle of olive oil
- 1/4 cup butter
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 2-3 cups sliced mushrooms – any kind
- a few sprigs of fresh thyme
- 2 Tbsp. all-purpose flour
- a splash of sherry or white wine (optional)
- 3-4 cups (or a 1L container) chicken stock
- salt and pepper
- 1/2-1 cup cream (heavy or half & half)
Cinnamon Swirl French Toast Casserole

DIRECTIONS Butter a 9”-x-13” casserole dish and arrange bread slices in an overlapping layer
- 6 eggs
- 2 c. milk
- 1 c. heavy cream
- 2 tsp. vanilla extract
- 2 tbsp. sugar
- kosher salt
- 1 (16-oz.) loaf Cinnamon Swirl Bread
- 1/2 c. flour
- 1/3 c. firmly packed brown sugar
- 1 tsp. ground cinnamon
- 1 Stick cold butter, cut into cubes
- Powdered sugar, for dusting
- Maple syrup, for serving
Limoncello and Prosecco Cooler with Raspberry Ice Cubes

1.Put your glasses in the freezer if possible, or at least the fridge so that they are cold
- Ingredients
- Fresh raspberries (approximately 5 per cocktail)
- A couple of sprigs of mint
- 4 oz cold sparkling wine or lemon flavored sparkling mineral water
- 2 oz Limoncello liqueur, cold (I keep mine in the freezer; it doesn't freeze because of the alcohol content)
CREAMY CHICKEN PASTA

Prepare orzo per directions on the box
- 1 cup orzo, cooked
- 3 tablespoons olive oil
- 1-pound (about 4) chicken breast halves, cubed
- 1-pound asparagus, rinsed, ends cut, and chopped into 2-inch pieces
- salt and fresh ground pepper, to taste
- 1 pint cherry tomatoes, halved
- For the Sauce
- 2 tablespoons olive oil
- 3 tablespoons all-purpose flour
- 1/2 cup vegetable or chicken broth
- 1/2 cup skim milk
- 3/4 cup shredded parmesan cheese (not the grated kind that comes in a green container!)
- salt and fresh ground pepper, to taste
Honey Lemon Chicken over Angel Hair Pasta

Pasta - Cook according to directions on box, drain, and set aside
- Pasta
- 8 ounces angel hair pasta, cooked according to package directions (half of a 1-pound box)
- Chicken
- 1/2 cup honey
- 1/4 cup lemon juice
- 2 tablespoons olive oil for sauce + 1 tablespoon for cooking chicken
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon pepper seasoning blend for sauce + more for sprinkling over chicken
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- leaves from 2 or 3 sprigs of thyme, optional and to taste
- 4 boneless skinless chicken breasts, diced into bite-sized pieces (about 1 1/2 pounds)
GARLIC HERB AND CHEESE BREAD

Mix the flour, yeast, salt, sugar and bread improver together in a large bowl
- 500 g plain flour
- 1/2 tablespoon dried yeast granules
- 1/2 tablespoon salt
- 1/2 tablespoon sugar
- 1/2 teaspoon bread improver
- 325 ml water at room temperature
- 1/2 tablespoon olive oil
- 1 garlic clove, crushed
- 1/3 cup chopped continental parsley
- 1/3 cup chopped basil
- 1/4 cup chopped rosemary leaves
- 1 tablespoon butter
- 200 g Grated Philly and Tasty cheese

Crispy Fried Chicken Sliders with Buffalo Sauce

Thinly slice each chicken breast diagonally into 6 pieces, keeping each piece roughly the same size
- For The Marinade
- 2 large chicken breasts, or 3 smaller-medium sized
- 1 1/2 cups buttermilk
- 1/4 cup Franks Buffalo Sauce
- 1/2 Tbsp garlic salt
- For The Dry Ingredients
- 1 1/2 cups all purpose flour
- 1/4 tsp salt
- 1/2 tsp onion powder
- Black pepper to taste
- 1 Tbsp herbs de Provence
- 1 tsp smoked paprika
- 12 mini slider buns
- 6 slices pepper jack cheese, halved
- 5 cups canola oil
Mini Apple Pies

Unroll your first pie crust and cut several circles out
- Mix the apples with:
- Start by cutting up eight cups of apples into small 1/2in bits.
- 12 tablespoons of flour
- 1 1/2 c of sugar
- 4 heaping teaspoons of cinnamon
- 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg...you could also leave it out)
- You will also need:
- 4 tablespoons of chilled butter cut into 24 equal portions.
- two boxes of pilsbury pie crusts (four chilled NOT frozen crusts)
- Make sure you stir everything around getting the apples nice and coated.
