  • 1/2 cup buttermilk
  • 1 1/4 cup rolled oats

1. Get the marinade prepared: Whisk together the marinade ingredients in a small bowl

  • For the marinade:
  • 1/3 c. soy sauce
  • 1/3 c. fresh squeezed lime juice

  • 1 large white onion, peeled and cut into 1/2-3/4-inch slices (keep the slices intact)
  • 18 6-inch flour tortillas

Preheat oven to 400° with rack in the center

  • Brown:
  • For the Meat Sauce —
  • 1 1/2 lb. ground chuck
  • 1 1/2 lb. ground mild Italian sausage

  • 2 cups yellow onion, diced
  • 2 T. garlic, minced
  • 2 T. tomato paste
  • 2 t. each dried basil, thyme, and oregano
  • 1/2 t. red pepper flakes
  • 1 bay leaf
  • Stir in; Simmer:
  • 1 can (28 oz.) crushed tomatoes in puree
  • 1 can (14.5 oz.) diced tomatoes, drained
  • 3/4 cup beef broth or water
  • 2 T. balsamic vinegar
  • Salt and pepper to taste
  • For the Béchamel —
  • Saute in 1/4 Cup Unsalted Butter:
  • 1 cup yellow onion, diced
  • 1/8 t. cayenne
  • Pinch nutmeg
  • Stir in:
  • 1/3 cup all-purpose flour
  • Gradually Add:
  • 3 cups whole milk
  • 10 oz. Boursin cheese (or Alouette)
  • Salt to taste
  • Whisk in:
  • 8 oz. frozen chopped spinach
  • 1 egg, beaten
  • To Assemble —
  • Prepare:
  • 1 lb. oven-ready lasagna sheets, parboiled
  • 1 lb. fresh mozzarella, thinly sliced
  • 6 oz. Parmesan cheese, grated
