Blueberry Crumble Pie

Bake the pie shell according to package directions, and then let cool completely
- 1 9 inch frozen pie shell
- 1 1/4 cups plus 2 tbsp. sugar, divided.
- 3/4 cup apple juice
- 1 tsp lemon zest, divided
- 2 tbsp blueberry jam
- 1/2 tsp vanilla extract
- 3 tbsp cornstarch
- 4 1/2 cups fresh blueberries divided
- 10 tbsp unsalted butter, cold and cubed
- 1 1/4 cups flour
- 1/3 tsp salt
- 1/2 cup buttermilk
- 1 1/4 cup rolled oats
Skirt Steak Fajitas

1. Get the marinade prepared: Whisk together the marinade ingredients in a small bowl
- For the marinade:
- 1/3 c. soy sauce
- 1/3 c. fresh squeezed lime juice
- 1/3 c. canola oil
- 3 cloves of garlic, minced
- 2 T. brown sugar
- 1 t. cumin
- 1 t. chile powder
- 2 about 2 lb. skirt steak
- 2-3 bell peppers, ends trimmed, cored and seeded, cut into a couple large pieces
- 1 large white onion, peeled and cut into 1/2-3/4-inch slices (keep the slices intact)
- 18 6-inch flour tortillas
- lime wedges
- toppings of your choice such as, cilantro, salsa, cheese, sour cream & avocados or guacamole
8-Layer Lasagna

Preheat oven to 400° with rack in the center
- Brown:
- For the Meat Sauce —
- 1 1/2 lb. ground chuck
- 1 1/2 lb. ground mild Italian sausage
- Add:
- 2 cups yellow onion, diced
- 2 T. garlic, minced
- 2 T. tomato paste
- 2 t. each dried basil, thyme, and oregano
- 1/2 t. red pepper flakes
- 1 bay leaf
- Stir in; Simmer:
- 1 can (28 oz.) crushed tomatoes in puree
- 1 can (14.5 oz.) diced tomatoes, drained
- 3/4 cup beef broth or water
- 2 T. balsamic vinegar
- Salt and pepper to taste
- For the Béchamel —
- Saute in 1/4 Cup Unsalted Butter:
- 1 cup yellow onion, diced
- 1/8 t. cayenne
- Pinch nutmeg
- Stir in:
- 1/3 cup all-purpose flour
- Gradually Add:
- 3 cups whole milk
- 10 oz. Boursin cheese (or Alouette)
- Salt to taste
- Whisk in:
- 8 oz. frozen chopped spinach
- 1 egg, beaten
- To Assemble —
- Prepare:
- 1 lb. oven-ready lasagna sheets, parboiled
- 1 lb. fresh mozzarella, thinly sliced
- 6 oz. Parmesan cheese, grated

1. Place the lasagna noodles in a large bowl and cover with boiling water; let soften for 15 to 20 minutes
- 12 no-boil lasagna noodles
- 1 teaspoon olive oil
- 1 pound bulk sweet Italian pork sausage
- 3 cups tomato sauce
- 3 1/2 cups ricotta
- 4 ounces goat cheese, crumbled

- 1 tbsp. light soy sauce
- 4 cups tiny asparagus spears, cut in 1" pieces
