In a large saute pan over medium-high heat, add the olive oil
- 1/4 cup olive oil
- 2 white onions, thinly sliced
- 1 leek, whites only, thinly sliced
- Kosher salt and cracked black pepper
- 3 tablespoons minced garlic
- 1 cup thinly sliced shiitake mushrooms, stems removed
- 1 cup vegetable broth
- 1 1/2 cups frozen peas, thawed
- Pinch red pepper flakes
- 3 tablespoons sliced scallion greens
- Dash sherry vinegar
- 8 (U-10) dry sea scallops
- 1 tablespoon butter
- Squeeze fresh lemon juice
Prime Rib with Beef Gravy

For the prime rib: Use the tip of a knife to make slits in the fat of the prime rib and stuff with slices of garlic
- Prime Rib:
- One 6- to 7-pound bone-in prime rib (to make slicing easy, ask your butcher to cut the bones from the meat, then tie them back onto the roast)
- 3 cloves garlic, sliced
- 1 /4 cup kosher salt
- 2 tablespoons coarsely ground black pepper
- Gravy:
- 1 /4 cup all-purpose flour
- 3 cups low-sodium beef stock
- 1 tablespoon Dijon mustard
- A few sprigs fresh thyme
- A few sprigs fresh rosemary
- 1 clove garlic, smashed
- 1 tablespoon sherry vinegar or red wine vinegar
Grandma's Old Fashioned Bread Pudding with Vanilla Sauce

PUDDING: Heat oven to 350°F
- PUDDING:
- 4 cups white bread, cubed, about 8 slices
- 1 /2cup raisins
- 2 cups milk
- 1 /4cup butter
- 1 /2cup sugar
- 2 eggs, slightly beaten
- 1 tablespoon vanilla
- 1 /2teaspoon ground nutmeg

- 1 /2cup firmly packed brown sugar
