- 1 pound scrubbed small beets
- 2 pounds tomatoes, preferably heirloom
- 1 pint cherry tomatoes
- 1/4 cup crumbled feta
- 1/4 cup fresh cilantro leaves
- 1/4 cup extra-virgin olive oil
- Salt and pepper
Tortilla de Patatas

Place potatoes in a large colander, sprinkle with 2 teaspoons salt, and toss to coat
- 3 pounds Yukon Gold potatoes (6-8), peeled, cut into 1/4" slices
- 2 teaspoons kosher salt plus more
- 2 cups olive oil
- 1 medium onion, chopped
- 10 large eggs, beaten to blend
Irish Soda Bread

- 4 cups all-purpose flour, plus extra for currants
- 4 tablespoons sugar

Using a sharp knife, trim all fat and silver skin from the tenderloins and set aside
- 2 (1 to 1 1/2 pound) pork tenderloins
- 1 tablespoon Dijon mustard
- 1/2 cup Rosemary-Apple Vinaigrette, recipe follows
- 2 tablespoons vegetable oil
- 1 1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1 (4-ounce) Granny Smith apple, cored, peeled, and cut into 1/4-inch thick slices
- 1/4 cup apple cider vinegar, plus 2 tablespoons
- 2 tablespoons minced shallots
- 2 tablespoons plus 1 teaspoon sugar
- 1 1/2 teaspoons chopped fresh rosemary
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon soy sauce
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons green onions
- 1/2 cup vegetable oil
Crack Dressing

- 1/2 cup olive oil
- Juice of 3 lemons
- 1 clove garlic, minced
- 4 teaspoons dijon mustard
- 2 teaspoons kosher salt
- 2 teaspoons fresh cracked pepper

- 6 boneless, skinless chicken thighs, about 2 pounds, pounded flat

- 3 cups, shredded frozen hash browns, thawed and drained
- 4 tablespoons (1/2 stick) butter, melted
- 3 large eggs, beaten
- 1 cup half-and-half
- 3/4 cup diced cooked ham
- 1/2 cup diced green onions
- 1 cup shredded Cheddar
- Salt and freshly ground black pepper
