- 2 tablespoons reduced-fat butter -- divided
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 4 medium tart apples -- thinly sliced
- 2 tablespoons chopped pecans

1. Butter an ovenproof baking dish and sprinkle with 2 - 3 Tbsp parm over the butter
- 32 oz frozen white kernel corn, defrosted. (I like a bag of white and a bag of yellow. Otherwise the dish really just looks white when finished)
- 1 1/2 cups whipping cream (light)
- 2 tsp salt
- 1 tsp sugar
- 3 Tbs flour mixed with
- 3 Tbs butter, melted
- 1/2 cup grated parmesan cheese. (We use the TJ's grated parm/romano blend)
- Few knobs of butter.
Picnic-Perfect Tuna-and-Macaroni Salad

- Salt and pepper
- 1 lb elbow macaroni
- 3 ribs celery, finely chopped
- 1/2 cup finely diced red onion
- 1/2 cup finely chopped fresh parsley
- 1 carrot, grated
- 1 12-oz. can tuna in water, drained
- 1/2 cup plus 2 Tbsp. reduced-fat mayonnaise
- 1/4 cup plain low-fat yogurt
- 1 Tbs plus 1 tsp. cider vinegar
Dijon Chicken Thighs w/Artichoke Sauce

1. Combine mustard, garlic and tarragon in large bowl
- 1/2 cup Dijon-style mustard
- 2 Tablespoons chopped garlic
- 1/2 tsp dried tarragon
- 2 1/2 lbs chicken thighs -- skinned (about 8)
- 1 cup chopped onion
- 1 cup sliced mushrooms -- (8 ounces)
- 12 oz (12 oz) quartered marinated artichoke hearts, undrained
- 1/4 cup chopped fresh parsley

CrockPot Chicken Cordon Bleu

1. Spray crockpot with cooking spray
- 4 chicken breast halves, pounded thin
- 4 slices of ham
- 4 slices of Swiss cheese, reduced fat
- 1 can (11 oz) cream-of celery soup
- 2 Tbs Fat free Half and half cream
Balsamic-Dressed Roasted Beets

- 6 medium beets (about 2 1/2 pounds)
- 1/2 cup fresh orange juice
- 1/4 cup balsamic vinegar
- 1 tablespoon sugar
- 1 star anise (optional)
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Mint Chocolate Chip Bundt Cake with Creme de Menthe

Wow! So good!!! I made it without the glaze, and it was still excellent
- For the cake:
- 3 cups (378 g) AP flour
- 1/2 tsp baking soda
- 3/4 tsp salt
- 2 cups mini chocolate chips
- 1/2 lb (2 sticks) unsalted butter, softened
- 3 cups sugar
- 6 large eggs
- 3/4 tsp peppermint extract
- 2 tsp vanilla
- 3 Tbs creme de menthe
- 1 Tbs heavy cream
- 3/4 cup low fat sour cream
- For the glaze:
- 12 oz semi sweet chocolate chips
- 1/2 cup heavy cream
- 3-4 T creme de menthe, to taste
- a few drops of peppermint extract, to taste
Nutella Rice Krispie Treats

1. Measure the cereal into a large mixing bowl and set aside
- Treats:
- 6 cups Rice Krispies (or 3 cups Rice Krispies and 3 cups Chocolate Puffed Rice)
- 1 bag (10.5-oz) miniature marshmallows
- 1/4 cup (2 ounces) unsalted butter
- 1.25 cup generous Nutella
- Topping: (Optional)
- 1 cup Nutella
- 1 1/2 cups chopped chocolate
- 1 Tbs trans-fat free shortening (or paraffin)
