Herb Roasted Pork Loin with Bourbon Gravy

1. In a small bowl combine well the oil, thyme, oregano, caraway seeds, onion, garlic and salt
- Gravy:
- 1 1/2 Tbs Vegetable oil
- 5/8 tsp dried thyme -- crumbled
- 5/8 tsp dried oregano -- crumbled
- 5/8 Tbs caraway seeds
- 1/2 small onion -- chopped fine
- 1 clove garlic -- minced
- 1 1/4 tsp coarse salt
- 2 1/2 lbs pork loin, lean, boneless -- tied
- 1 Tbs bourbon
- 1/2 cup nonfat chicken broth
- 1/3 cup water
- 1 Tbs unsalted butter
- 1 1/3 Tbs all-purpose flour
- 1/3 cup scallion -- chopped
Hoisin and Bourbon-Glazed Pork Tenderloin

If you have a gas grill, omit the wood chips!
- 1 cup hickory wood chips
- 1/3 cup hoisin sauce
- 2 Tbs seasoned rice vinegar
- 2 Tbs bourbon
- 2 Tbs maple syrup
- 1 1/2 tsp grated peeled fresh ginger
- 1 1/2 tsp fresh lime juice
- 1/2 tsp chili paste with garlic
- 1 garlic clove, minced
- 2 (1-pound) pork tenderloins, trimmed
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper

1. Place 3 tablespoons butter in a small glass measuring cup
- 3 Tbs butter, divided

- 1 (8-ounce) package presliced mushrooms
- 2 Tbs finely chopped shallots
- 1 Tbs minced fresh garlic
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/4 tsp salt, divided
- 1/4 tsp black pepper, divided
- 3 Tbs all-purpose flour
- 3/4 cup fat-free, less-sodium chicken broth
- 1/2 cup dry Marsala wine
- 1/2 cup frozen green peas
- 2 Tbs half-and-half
- 3 oz fettuccine (uncooked)
Caesar Chicken-Pasta Salad

- 3 cups (about 12 ounces) skinned, shredded roasted chicken breast
- 3 cups hot cooked penne (about 6 ounces uncooked tubular-shaped pasta)
- 2 cups thinly sliced romaine lettuce
- 1 1/2 cups halved cherry tomatoes
- 1/2 cup thinly sliced fresh basil
- 1/2 cup chopped green onions
- 1/3 cup Marzetti Light Caesar dressing
- 1/4 cup chopped fresh parsley
- 1 (4-ounce) package crumbled feta cheese
