- 1/3 cup beef or chicken stock
- 1 lb. pumpkin or butternut squash, peeled, seeded and cut into 3/4-inch chunks

- 1 t. ginger
- 3 T. rice wine vinegar
- 1/3 c. creamy peanut butter
- 1 T. crushed red pepper, adjust to taste, not much

- 2-4 c. julienned carrots, blanched
