The best guac recipe I've found over the years
- 3 avacados-peeled, pitted and mashed
- 1 lime, juiced
- 1 t. salt
- 1/2 c. diced onion
- 3 T. chopped fresh cilantro

- 1 pinch ground cayenne pepper (optional--be careful--not too much!
Shrimp Dip

- 1 c. tiny shrimp, drained
- 1 c. sour cream
- 1/4 . c. chili powder
- 2 t. lemon juice
- 1/2 t. salt
- 1/8 t. pepper
- 1 t. mustard
- Dash tabasco
Roasted Asparagus with Parmesan

Preheat oven to 450. Trim tough ends from asparagus
- 1 1/2 lb. asparagus (2 bunches)
- 1 T. oiive oil
- Coarse salt
- Ground pepper
- 1/4 c. Parmesan cheese
Chicken Parmigiana

Directions Preheat oven to 425 degrees
- 3 ounces baked whole-grain wheat crackers, such as Triscuits (about 12)
- 1/3 cup fresh flat-leaf parsley
- 1/2 teaspoon dried oregano
- Coarse salt and freshly ground pepper
- 1 can (28 ounces) diced tomatoes (no salt added), with juice
- 1/2 medium onion (3 ounces), coarsely chopped
- 2 garlic cloves, coarsely chopped (2 teaspoons)
- 1 tablespoon extra-virgin olive oil
- 2 large egg whites
- 6 boneless, skinless chicken breast halves (6 ounces each)
- 3 ounces part-skim mozzarella cheese, grated (about 1 cup)
- 1 ounce pecorino Romano cheese, finely grated (about 1/2 cup)
Perkins Summer Strawberry Salad

A delicious summer salad with mixed greens and strawberries!
- Mixed garden greens--can be spinach, red lettuce, butter lettuce, include some shredded carrots, red cabbage, etc.
- Dill roasted slivered almonds--or just mix. In some dill weed.
- Sliced strawberries
- Slivers of asiago cheese
- Honey mustard & balsamic vinegrette mixed together
Chow Mein

This recipe makes use of left over pork or chicken
- 1/4 c. butter or margarine
- 1 c. onion, finely chopped
- 1/4 t. salt
- 2 c. celery, chopped
- Dash of pepper
- 1 1/2 c. water or chicken broth
- 1 can bean sprouts or 4 c. cabbage, chopped
- 2 c. chicken, beef or pork, cut up
- 2 T. cornstarch
- 1/4 c. soy sauce
- 1 bouillon cube, optional
- 1 t. sugar

Prepare Creamettes according to pkg
- 1 7 oz. pkg. Creamette Shells
- 1 10 oz. pkg. frozen peas, cooked and drained
- 1 10 oz. pkg. frozen shrimp, thawed
- 1/2 c. radishes, sliced
- 1/2 c. green pepper, diced
- 1/4 c. onion, diced
- 1 2 oz. jar chopped pimiento
- 1/2 c. mayonnaise
- 1 T. horseradish sauce
- 1 t. seasoned salt
Grilled Garden Salad

Prepare on a mesh grill pan
- For the grilled summer salad:
- 1/2 Tbs. fresh lemon juice
- 5 Tbs. olive oil
- Kosher salt and freshly ground pepper, to taste
- 1 red bell pepper, seeded and cut into 1/2-inch dice
- 1 jalapeño pepper, seeded and thinly sliced
- 1 bunch green onions, white and green portions, cut into 1-inch pieces
