- 1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
- 2 cups water
- 3 cups rotini pasta, uncooked
- 1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
- 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
- 1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes
Peach and Cornmeal Upside-Down Cake

Directions Preheat oven to 350 degrees
- 5 1/2 ounces (1 stick plus 3 tablespoons) unsalted butter, softened
- 1 cup sugar
- 3 medium ripe peaches (about 1 1/4 pounds), skins on, pitted, and cut into 3/4-inch wedges

In a 4-quart Dutch oven bring broth to boiling
- 4 oz Low sodium chicken broth
- 1 1/3 c. dried medium shell pasta
- 1 14 1/2 ounce can diced tomatoes
- 1/4 teaspoon crushed red pepper (optional)
- 1 15 ounce can navy beans, rinsed and drained
- 1 cup chopped cooked chicken breast
- 1 cup fresh arugula
- 1/2 cup chopped fresh basil
- 1 tablespoon extravirgin olive oil
- Kalamata olives
- Parmesan cheese
Potato-Gruyere Gratin

If you like your gratin a little more browned on top, broil it for a minute before serving
- 1 small head cauliflower
- 1 1/2 lb. Yukon gold potatoes, peeled and very thinly sliced
- 3 leeks(optional--adds flavor)thinly sliced, white and light green parts only)
- 3 c. whole milk
- 1/4 c. water
- 2 T. cornstarch
- 1/4 t. freshly grated nutmeg
- 3 oz. Gruyere cheese, shredded (1 1/4 c.)
- Salt to taste
