- 1 can(s) no-salt-added fire-roasted diced tomatoes
- 1 package(s) (13.25-ounce) whole-grain penne
- 1 cup(s) packed fresh mint leaves, finely chopped
Shrimp, Lemon & Feta

In pot, heat first 6 ingredients over medium-high; season
- 1/3 cup EVOO
- 1/4 cup finely chopped flat-leaf parsley
- 2 tablespoons
- 2 cloves garlic, chopped
- 1 teaspoon lemon zest
- 1/4 teaspoon crushed red pepper
- 1 pound shrimp, peeled and deveined
- 8 ounces cooked linguine
- 1 6 ounce package fresh spinach
- 1 cup crumbled feta
Chili-Rubbed Pork Loin

If you want to try making your own brine and mixing your own rub, this recipe is a good start!
- Brine:
- 1 pork-loin, 4-5 lbs.
- 1/2 c. salt
- 1/2 t. black pepper
- 4 crushed garlic cloves
- 3-4 c. water to cover
- Chili rub:
- 3 T. chili powder
- 1 T. cumin
- 1 t. coriander
- 1 t. garlic powder
- 1 T. salt
- 1/2 t. pepper
- 1/4 t. cayenne pepper
- 1 T. oregano
- 1/4 c. olive oil

- 1/2 c. milk
- 3 T. melted butter
- 1 c. fine, dry bread or cracker crumbs
- 3 T. finely chopped onion
- 3 T. finely chopped green pepper
- 2 T. brown sugar
- Mixture of: 1 t. salt, 1/4 t. Accent, 1/4 t. pepper

- 1 t. kosher salt
