Bacon Ranch Cream Cheese Roll-Ups

Instructions In a large bowl, combine the cream cheese, red pepper, scallions, bacon and ranch mix
- 4 12-inch tortillas
- 2 8-ounce packages cream cheese, softened
- 1/2 cup finely chopped red pepper
- Scant 1/2 cup finely chopped scallions
- 1/3 cup finely chopped cooked bacon
- 3 tablespoons homemade ranch dressing mix
Island Coconut-Shrimp Rolls

Heat oven to 375°F. Line large cookie sheet with cooking parchment paper
- 16 cooked deveined large shrimp (about 1/2 lb), peeled (with tails left on)
- 1/4 cup cream of coconut (not coconut milk)

- Powdered sugar
- 1 1/2 cups sliced or cut up fresh fruit, such as strawberries, peaches, nectarines and/or kiwi fruit

- 1 tbsp (5 mL) oil
- 1 cup (250 mL) diced onions
- 1 clove garlic, minced
- 2 cups (500 mL) chopped Golden Delicious apples
- 2 cups (500 mL) chopped McIntosh apples
- 1-1/2 cups (375 mL) fresh or frozen cranberries
- 1-1/4 cups (300 mL) granulated sugar
- 1 cup (250 mL) water
- 1/2 cup (125 mL) apple cider vinegar
- 1/2 tsp (2 mL) Each: salt, dried sage and thyme
