In a large skillet, combine the first six ingredients
- 2-1/2 cups shredded cooked chicken
- 2/3 cup salsa
- 1/3 cup sliced green onions
- 3/4 to 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 6 flour tortillas (8 inches)
- 1/4 cup butter, melted
- 2 cups (8 ounces) shredded Monterey Jack cheese
- Sour cream and guacamole
Grilled Lobster Tails with Lemon-Red Fresno Butter

For the lemon-red Fresno butter: Put the lemon juice in a small saucepan and bring to a boil over high heat
- (LEMON RED FRESNO BUTTER)
- 1 1/2 cups freshly squeezed lemon juice
- 1 teaspoon clover honey
- 2 sticks unsalted butter, softened
- 2 teaspoons finely grated lemon zest
- 3 red Fresno chiles, grilled, seeded and finely diced
- Kosher salt and freshly grounded black pepper
- (GRILLED LOBSTER TAILS)
- Kosher salt
- 8 jumbo Maine lobster tails (8 to 10 ounces each)
- Canola oil, for brushing
- Freshly ground black pepper
- Fresh cilantro leaves, for garnish

- 2 pork tenderloins (1 pound each)
- 1 package (6 ounces) dried apricots
- 1/3 cup sweet-and-sour salad dressing
- 1/4 cup packed brown sugar
- 3 tablespoons teriyaki sauce
- 2 tablespoons ketchup
- 1 teaspoon Dijon mustard
- 1 onion slice, separated into rings
- 1 garlic clove, minced
- 2 teaspoons minced fresh gingerroot
- 1/4 teaspoon pepper
- 1/8 teaspoon pumpkin pie spice

- 2 tablespoons butter
- 1 clove garlic, pressed
- 24 fresh large shrimp, peeled (about 1 pound)
- 1 lime
- (Seasoning)
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dried parsley flakes
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/8 teaspoon dried thyme
- 1/8 teaspoon onion powder
Artichoke & Roasted Garlic Dip

- 2 heads of Roasted Garlic*
- 6 oz Frozen Artichoke Hearts
- 4 oz Cream Cheese
- 1/2 cup Plain Greek Yogurt

- 1/2 tsp Cracked Pepper
