Jim's "Don't Spare the Spareribs" Ribs

My favorite sticky, ooey, falling apart spareribs, also included is a recipe for my famous homemade sauce!
- BBQ SAUCE
- 1 cup ketchup
- 1 cup tomato juice
- 1/2 cup brown sugar
- 1/2 teaspoon liquid smoke
- 1 teaspoon Worcestershire sauce
- 1 lime, zest of
- 1 lime, juice of
- 1/4 cup cider vinegar
- 1 dash crushed red pepper flakes
- 1 dash cayenne
- salt and pepper
- 1/4 cup minced onion
- 1 clove garlic, minced
- SPICE RUB
- 1 cup brown sugar
- 1/2 cup paprika
- 2 1/2 tablespoons ground black pepper
- 2 1/2 tablespoons salt (I prefer kosher)
- 1 1/2 tablespoons chili powder
- 1 1/2 tablespoons garlic powder
- 1 1/2 tablespoons onion powder
- 1 -2 teaspoon cayenne
- 3 pork spare rib racks (3 pounds or less each)
- 1 can lager beer (optional)
Cinderella Beef Short Ribs

- RUB INGREDIANTS
- 3/4 cup paprika
- 1/4 cup black pepper
- 1/4 cup salt
- 1/4 cup sugar
- 2 tablespoons chili powder
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 teaspoons cayenne pepper
- CINDERELLA GLAZE INGREDIANTS
- 1 1/2 cups ketchup
- 1 cup beer
- 3/4 cup red wine vinegar
- 1/4 cup minced fresh cilantro
- 3 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 2 garlic cloves, minced
- 2 teaspoons cumin
- 1 1/2 teaspoons salt
- 1 teaspoon Tabasco sauce
- MEAT
- 5 -6 lbs beef short ribs, bone in and cut between the ribs
Cappuccino Mousse Trifle Recipe

In a large bowl, stir milk and coffee granules until dissolved; remove 1 cup and set aside
- 2-1/2 cups cold milk
- 1/3 cup instant coffee granules
- 2 packages (3.4 ounces each) instant vanilla pudding mix
- 1 carton (16 ounces) frozen whipped topping, thawed, divided
- 2 loaves (10-3/4 ounces each) frozen pound cake, thawed and cubed
- 1 ounce semisweet chocolate, grated
- 1/4 teaspoon ground cinnamon
Italian Meatball Sliders with Red Sauce

Directions Preheat the oven to 350 degrees F
- 2 tablespoons extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, sliced
- 1 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- One 28-ounce can crushed fire-roasted tomatoes
- 1 tablespoon chopped fresh basil
- 2 sprigs fresh thyme
- Kosher salt and freshly ground black pepper
- (MEATBALLS)
- 1/4 cup panko breadcrumbs
- 1/4 cup milk
- 8 ounces ground beef
- 8 ounces ground pork
- 1/4 cup grated Parmesan
- 2 tablespoons chopped fresh Italian parsley
- 2 cloves garlic, minced
- Kosher salt and freshly ground black pepper
- 2 tablespoons extra-virgin olive oil
- 1/2 pound fresh buffalo mozzarella, sliced

- 4 oz (125g)northern shrimp
- 1/4 c seafood sauce
- baked tortilla chips
- 1/2 c shredded Canadian montery jack or mozzarella cheese.
The Real Chicago Deep Dish Pizza Dough

I have it on good authority that this is the real Deep Dish Pizza Dough that's used in Chicago
- 3 cups all-purpose flour
- 1 1/8 cups warm water (105 - 115 degrees)
- 1/2 cup corn oil
- 2 1/4 teaspoons yeast (1 packet)
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons kosher salt
Chicken Parmesan Baked Ziti

Preheat oven to 375 degrees F
- 12 ounces DeLallo penne ziti (or any pasta shape)
- 2 cups shredded, cooked chicken (about 2 small chicken breasts)
- 1 (25 ounce) jar DeLallo Pomodoro Fresco Tomato-Basil Sauce (pasta sauce)
- 1 1/2 cups shredded mozzarella cheese (I used 2% low fat)
- 1/3 cup freshly-grated Parmesan cheese
- 1/4 cup packed fresh basil leaves, roughly chopped
Italian Chicken and Peppers Recipe

Place chicken in a 3-qt. slow cooker
- 6 boneless skinless chicken breast halves (4 ounces each)
- 1 jar (24 ounces) garden-style spaghetti sauce
- 1 medium onion, sliced
- 1/2 each small green, sweet yellow and red peppers, julienned
- 1/4 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4-1/2 cups uncooked spiral pasta
- Shaved Parmesan cheese, optional
Roasted Garlic Aioli

- 2 to 3 whole heads garlic
- Extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 1 cup mayonnaise
- 1/3 cup fresh lemon juice
- 2 tablespoons grated Parmesan
- 1/2 tablespoon Dijon mustard
- 1/8 teaspoon cayenne pepper
- Dash Worcestershire sauce
- Chopped fresh parsley, for garnish
