Directions Place an oven rack in the center of the oven and preheat to 400 degrees F
- Butter, for greasing the pan
- 2 tablespoons extra-virgin olive oil
- Two 3-to-4-ounce sweet or spicy Italian sausage links, casings removed
- 2 cloves garlic, minced
- 1 cup shredded smoked mozzarella (4 ounces)
- 4 large eggs, at room temperature
- 2 cups milk, at room temperature
- 1 1/2 cups all-purpose flour
- 2 small green onions, pale green and white parts only, finely sliced to yield 1/4 cup
- 3 tablespoons chopped fresh basil
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- Maple syrup, for drizzling

- 1 (17-ounce) package frozen puff pastry
- 1 egg, beaten
- 1 to 2 teaspoons cayenne pepper (optional)
- 1 cup sharp cheddar cheese, finely shredded or a mix of your favorite cheeses
- 26 to 30 pieces bacon, thin cut or 18 pieces of thin cut bacon sliced in half lengthwise
- 1/2 cup brown sugar
- 1 tablespoon fresh rosemary, minced, or sage or thyme
- 1/4 teaspoon salt
- 1/2 teaspoon pepper

- 1 tablespoon paprika
- 1/2 bay leaf
- 7 (8 ounce) cans beef broth, divided (recommended Swanson's)
- 1/2 cup dry white wine (optional)
- 3/8 cup all-purpose flour (such as Wondra) or 3/8 cup instant flour (such as Wondra)
- 1/2 to taste caramel coloring (optional) or 1/2 to taste Kitchen Bouquet (optional)
- 1 teaspoon salt
- 1/2 to taste French baguette (optional)
- 1/2 to taste swiss cheese (optional) or 1/2 to taste gruyere cheese (optional)

Creole Jambalaya Recipe

In a Dutch oven, saute the onion, celery and green pepper in butter until tender
- 3/4 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup chopped green pepper

- 2 garlic cloves, minced
- 2 cups cubed fully cooked ham
- 1 can (28 ounces) diced tomatoes, undrained
- 1 can (10-1/2 ounces) condensed beef broth, undiluted
- 1 cup uncooked long grain white rice
- 1 cup water
- 1 teaspoon sugar
- 1 teaspoon dried thyme
- 1/2 teaspoon chili powder
- 1/4 teaspoon pepper
- 1-1/2 pounds fresh or frozen uncooked shrimp, peeled and deveined

- 5 pounds red potatoes
- A palmful garlic powder
- A palmful of onion powder
- A palmful of dried parsley
- A palmful of dried rosemary
- A palmful of dried thyme
- Extra-virgin olive oil (EVOO), to coat the potatoes
- Salt and lots of freshly ground black pepper
- For the carrots:
- 3 to 4 tablespoons butter
- 1/2 cup water
- 2 28-ounce bags (the large ones) of frozen carrots
- 1/2 cup honey
