Chinese Chicken with Black Pepper Sauce

- 1 lb boneless skinless chicken thighs (skinless boneless breast substitution ok)
- 6 tablespoons cornstarch
- 1 large onion, diced
- 1 cup frozen peas and carrot
- cooking oil
- hot steamed rice
- 1/4 cup oyster sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1 teaspoon rice wine or 1 teaspoon sake
Spaghetti Sauce

Preparation Instructions IMPORTANT: This recipe can easily be halved! I just like to make a ton so I can freeze it
- 5 pounds Ground Beef (I Used Ground Round)
- 3 Tablespoons Olive Oil
- 2 whole Large Yellow Onions, Diced
- 2 whole Green Bell Pepper, Seeded And Diced
- 6 cloves Garlic, Minced
- 1 cup White Wine (or Low Sodium Beef Broth If You Prefer)
- 2 cans 28 Ounce Crushed Tomatoes
- 1 can (14 Ounce) Crushed Tomatoes
- 1 can (small, 4-ounce) Tomato Paste
- 1 jar Good Storebought Marinara Sauce (can Use Another Jar If You Like The Sauce To Be More Saucy Than Meaty)
- 1 teaspoon Ground Oregano
- 1 teaspoon Ground Thyme
- 4 whole Bay Leaves
- 2 Tablespoons Sugar
- 2 teaspoons Kosher Salt
- 1/2 teaspoons Crushed Red Pepper (optional)
- 1/4 cups Finely Minced Fresh Parsley (or 3 Tablespoons Parsley Flakes), More To Taste
- 1 whole Rind From One Wedge Parmesan (optional)
- 1/2 cups Grated Parmesan Cheese (optional)
- 2 pounds Spaghetti, Cooked Al Dente And Tossed With Olive Oil
- Extra Minced Parsley, For Serving

Pomegranate Feta Salad

- 1/4 cup granulated sugar
- 1 (10 ounce) package mixed baby greens
- 1 pomegranate, peeled and seeds separated (see Note)

- 1 tablespoon vegetable oil
- 1 pound medium raw shrimp, peeled and deveined, shells reserved
- 1 jalapeño pepper,* cut into slivers
- 1 tablespoon paprika
- 1/4 teaspoon ground red pepper
- 4 cans (about 14 ounces each) reduced-sodium chicken broth
- 1/2-inch strip each lemon and lime peel
- 1 can (15 ounces) straw mushrooms, drained
- Juice of 1 lemon
- Juice of 1 lime
- 2 tablespoons reduced-sodium soy sauce
- 1 fresh red Thai chili pepper or red jalapeño pepper or 1/4 small red bell pepper, cut into strips*
- 1/4 cup fresh cilantro
- Jalapeño and Thai chili peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.
