In a large bowl, combine the tomato sauce, rice, green pepper, cracker crumbs, egg and soup mix
- 1 large head cabbage
- 1 can 8 oz tomato sauce
- 3/4 cup quick cooking rice
- 1/2 cup chopped green pepper
- 1/2 cup crushed saltines about 15 crackers
- 1 egg lightly beaten
- 1 oz onion soup mix
- 1 1/2 lb lean ground beef
- 1 can 46oz V8 juice
- Salt to taste
- Grated parmesan cheese optional
Slow-Cooked Beef Short Ribs With Red Wine Sauce

- 2 tablespoons flour
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 4 lbs beef short ribs
- 2 tablespoons extra virgin olive oil
- 2 onions, sliced
- 1 cup red wine
- 1 cup chili sauce
- 6 tablespoons brown sugar
- 6 tablespoons apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dry mustard
- 1 teaspoon chili powder
- 4 tablespoons flour
- 1/2 cup red wine
Green Bean Casserole

- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon white sugar
- 1/4 cup onion, diced
- 1 cup sour cream
- 3 (14.5 ounce) cans French style green beans, drained
- 2 cups shredded Cheddar cheese
- 1/2 cup crumbled buttery round crackers
- 1 tablespoon butter, melted

In saucepan bring the dressing ingredients to a boil
- 1 1/2 cups vinegar
- 1/2 cup water
- 1 1/4 - 1 1/2 cups white sugar
- 1 tsp celery seed
- 1 1/2 tsp mustard seed
- 1/2 tsp turmeric
- 1 1/2 tsp salt
- 1 large head cabbage
- 1 large carrot
- 1/2 Spanish or white onion
- 1 or 2 green peppers all shredded
CHARD AND LENTIL SOUP from Samuel

In a 6 qt pot, heat the olive oil, paprika, and cumin over low heat, stirring until aromatic, 2 to 4 minutes
- 1/4 cup olive oil
- 1 tsp sweet paprika
- 1 tsp ground cumin
- 1 or 2 medium bunches of scallions, trimmed, white parts cut into 1/4 inch pieces, enough green part cut similarly to fill 1/4 cup
- 1 lb lentils (green, brow, red) (Red are preferred)
- 5 1/2 cups chicken broth or vegetable soup
- 3-4 cloves of garlic minced
- 1 bunch of chard (red preferred but white or yellow stem work well too) stemmed and leaves roughly chopped
- 1 bunch cilantro, coarsely chopped
- Juice of 1 lemon
- Kosher or sea salt to taste (use no much because broth typically has a lot of salt)
- A small pinch of crushed red pepper flakes
- Fresh ground pepper to taste

• Place the rosemary, thyme, bay leaf and cloves into cheesecloth and secure with twine
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 dry bay leaf

- 1 1/2 Tbsp olive oil
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 1 28-ounce can Italian-style tomatoes
- 3 Tbsp chopped fresh mint
- 1/2 tsp dried oregano
- 1/2 cup crumbled soft fresh goat cheese (such as Montrachet)
