Coconut Blue Hawaiian

- 1 cup pineapple juice
- 1/2 cup (4 ounces) light rum, if desired
- 1/2 cup (4 ounces) blue curaçao
- 1/2 cup (4 ounces) cream of coconut (not coconut milk)
- 10 to 12 ice cubes
- Fresh cherries or maraschino cherries with stems, if desired
Marbled Grasshopper Cheesecake

In a small bowl stir together crushed cookies and melted butter till well combined
- Crust:
- 1/4 c.chocolate mint cookies
- 3 Tbs. butter
- Filling:
- 24 oz. cream cheese
- 2/3 c. sugar
- 1/4 c. sour cream
- 5 Tsp. cornstarch
- 3 eggs.
- 1 egg yolk
- 1 Tsp. vanilla extract
- 5 Tsp. unsweetened cocoa powder
- 2 1/2 Tbs. sugar
- 1/2 C. green crème de menthe liqueur
- Toppings:
- 1/2 C. semisweet chocolate chips
- 3 1/2 Tbs. sour cream
- 4 Tsp. crème de menthe liqueur
- 4 Tsp. sugar

Instructions Preheat oven to 350 degrees
- 2/3 cup butter, softened but not melted
- 1/4 cup white sugar
- 1 1/4 cups white flour
- 1/2 cup butter
- 1/2 cup brown sugar
- 2 tablespoons corn syrup
- 1/2 cup sweetened condensed milk
- 2 cups chocolate chips
- 1 teaspoon vegetable oil

- 1/2 C. frozen limeade concentrate, thawed

- 1 Tbs. orange-flavored liqueur
- 1 Tsp. tequila

Peanut Butter Chocolate Chip Bars

- 1 3/4 cup all-purpose flour
- 1 1/4 cup packed light brown sugar
- 1 cup creamy peanut butter
- 1/2 cup butter, softened to room temperature
- 3 Tablespoons milk
- 1 large egg
- 1 Tablespoon vanilla extract
- 3/4 teaspoon salt
