- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 (2 inch) piece fresh ginger root, chopped
- 2 tablespoons vegetable oil
- 2 teaspoons ghee (clarified butter)
- 2 dried red chile peppers, broken into pieces
- 1 teaspoon cumin seeds
- 6 whole cloves
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 tomatoes, chopped
- 2 cups water
- 1 teaspoon white sugar
- salt to taste
- 2 teaspoons garam masala
- 1 teaspoon ground red pepper
- 1/4 cup cilantro leaves, chopped
Indian Eggplant - Bhurtha

1.Preheat the oven's broiler
- 1 eggplant
- 2 tbsps vegetable oil
- 1/2 tsp cumin seeds
- 1 onion (sliced)
- 1 tsp fresh ginger (chopped)
- 1 tomato (- peeled seeded and diced)
- 1 clove minced garlic
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1/2 tsp salt (taste)
- black pepper (ground, taste)
- 1/4 cup fresh cilantro (chopped)
Cauliflower Walnut Meat Sauce

Instructions Begin my making the cauliflower walnut crumbles
- 3 cups cauliflower florets (about 1 medium crown)
- 1 cup chopped walnuts
- 1/4 cup nutritional yeast flakes
- 2 tablespoons soy sauce
- 2 teaspoons red wine vinegar
- 1/2 teaspoon liquid smoke (optional)
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- I've also seen this with mushrooms.

- 1 1/2 pounds trimmed slender green beans (such as haricots verts)
