Mexican Quinoa Flatbread

This Mexican Quinoa Flatbread couldn’t be simpler to make and is full of flavour
- 3/4 cup / 135g Quinoa
- 4 tbsp Tomato puree
- 1 clove of Garlic
- 1/2 tsp Cayenne pepper
- 1/2 tsp Baking powder
- 1/2 tsp Turmeric
- 1 cup / 240 ml Water
- Salt & Pepper to taste
- 2 tbsp Sweetcorn
- 2 tbsp Black beans, cooked
- 1 slice Red onion
- 1/2 Avocado, diced
- Coriander/cilantro leaves
- 1/2 Lime, juiced
Everything Snack Mix

Preheat the oven to 300 degrees F
- 4 cups honey nut cereal, such as Chex
- 2 cups salted pretzel sticks, hollows or squares
- 2 cups grooved Cheddar crackers, such as Cheez-It
- 1 cup wasabi peas
- 1 cup unsalted peanuts
- One 3-ounce package ramen noodle soup, noodles broken into pieces, seasoning packet reserved
- 8 tablespoons (1 stick) unsalted butter
- 1/3 cup grated Parmesan

- 1/2 c olive oil
- 1-1/2 c minced shallots (about 8)
- 3 T ground coriander
- 3/4 t turmeric
- 4-1/2 c basmati rice or other long-grain white rice
- 9 c low-salt chicken broth

- 1/2 c chopped fresh Italian parsley
