Grain-free Peanut Butter Chocolate Chip Cookie Dough Balls

Preheat your oven to 350°F / 175°C
- 1 1/4 cups canned chickpeas, well-rinsed and patted dry with a paper towel 1
- 2 teaspoons vanilla extract
- 1/2 cup + 2 tablespoons (165 grams) natural peanut butter 2
- 1/4 cup (80 grams) honey (commenters have used agave with success!)
- 1 teaspoon baking powder 3
- a pinch of salt if your peanut butter doesn't have salt in it
- 1/2 cup (90 grams) chocolate chips
Quinoa and Spinach Pilaf

In a large saucepan, melt butter over medium
- 1 tablespoon unsalted butter
- 1 finely chopped small yellow onion
- 1 minced clove garlic
- 1 cup rinsed quinoa
- 1 1/4 cups water
- 5 cups baby spinach (5 ounces)
- 1 tablespoon grated lemon zest
- Salt and pepper
Wild Rice and Kale Salad

1.Toss first six ingredients
- 1/2 cup cooked wild rice
- 1 cup kale, chopped
- 1/2 cup cauliflower pieces
- 1 cup cherry tomatoes
- 2 tbsp sunflower seeds
- 1 oz crumbled blue cheese

- 1 1/2 tsp lemon juice

- 1 cup raw almonds
- 15 whole pitted dates
- 2/3 cup cacao powder (I use Dagoba)
- 1 tablespoon honey

- 1 medium baking apple, peeled, cored and cubed
- 3 Tbsp. butter, melted

Light Breakfast Casserole

- 6 slices whole wheat bread, crust off
- 1 lb. turkey sausage
- 2 C grated reduced fat cheddar cheese
- 6 eggs
- 2 C reduced fat milk
- 1 tsp salt

1. Place cream cheese, cheese cubes, and garbanzo beans in a food processor
- 1/2 8 ounce package reduced-fat cream cheese, cubed and softened
- 4 ounces Colby-Monterey Jack cheese, cubed and at room temperature
- 1/2 cup rinsed and drained canned no-salt-added garbanzo beans (chickpeas)
- 1/4 cup finely chopped purchased roasted red sweet pepper
- 1/2 cup small pretzel twists
- Small pretzel twists and/or assorted crackers
Orange- Pomegranate Ricotta Toast
