Low Fat Zucchini Brownie

Preheat oven to 350 degrees F
- 1/2 cup applesauce
- 2 small or medium bananas mashed
- 1 1/2 cup sugar
- 2 tsp. vanilla extract
- 1/2 cup cocoa powder
- 1 1/2 tsp. baking soda
- 1/2 tsp salt
- 2 cups finely shredded zucchini
- 2 cups all purpose flour
- 1/2 cup walnut pieces
Maple Glazed Pecans

Combine syrup, cinnamon and sea salt and stir until well mixed
- 2 1/2 cups of pecans
- 1/3 cup maple syrup
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon sea salt
Chocolate Chiffon Cake

1. preheat oven to 350 degrees
- 3/4 cup plus 1 tbsp. flour
- 3 tbsp. plus 1/2 tsp. unsweetened cocoa powder
- 1/2 cup raw or granulated sugar
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3 1/2 tbsp. canola oil
- 2 large egg yolks
- 2 tbsp. fresh orange juice
- 1/2 tsp. grated orange zest
- 3 tbsp. plus 1 tsp. water
- 4 large egg whites
- 2 tbsp. granulated sugar
Healthy Spinach & Artichoke Dip

Drain the artichokes and roughly chop them
- 2 cans artichoke hearts, drained and coarsely chopped
- 1 package frozen spinach, thawed, drained and squeezed dry
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup low-fat 2% Greek yogurt
- 1 (8 oz) block 1/3-less-fat cream cheese, softened and cut in 1/2" cubes
- 1 (8 oz) block fat-free cream cheese, softened and cut in 1/2" cubes
- 1 Tbsp cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon ground black pepper
Whole-wheat Pancakes

1. In large bowl, sift together the flour, baking powder, salt and sugar
- 1 c whole wheat + 1/2c white flour
- 1/4 cup ground flax seed
- 1 Tablespoon Wheat Germ
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 1 Tablespoon raw sugar
- 1 1/2 cups milk 2 eggs
Crockpot chicken tortilla soup

Add all the ingredients to the crockpot
- 1 yellow onion (diced)
- 3 gloves of garlic (minced)
- 1 Serrano pepper (diced and without seeds)
- 1 red pepper (diced)
- 3 celery stalks (diced)
- 1 chipotle pepper (minced with seeds)
- 1 can of diced tomatoes
- 2 jalapeno peppers (diced one with seeds one without depending if you like it spicy)
- 1 teaspoon of cumin seeds
- 2 bay leaves
- 6 cups of chicken stock
- 2 cans of white shoepeg corn
- 1 - 1 1/2 lbs of boneless skinless chicken breast
Crockpot Buffalo Chicken Meatballs

In a large bowl, combine ground chicken, blue cheese crumbles, garlic salt, and creole seasoning
- 2 lbs. of ground chicken
- 8 oz. of blue cheese crumbles
- 2 tsp. of garlic salt
- 1 tsp. of Zatarain's Big & Zesty Creole Seasoning
- (or sub for red & green pepper seasonings)
- 2 cups of Buffalo Sauce
“Dinner Bells” Recipe (Stuffed Bell Peppers)

Cut off tops of peppers. Clean out completely and discard seeds
- 5 medium red or orange bell peppers
- 1 lb. lean ground turkey
- 1 cup chopped onion
- 2 1/2 tsp. dried Italian seasoning
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1 1/2 cups cooked brown rice (or substitute w/ Quinoa)
- 1 jar (25 oz.) marinara sauce
- 1/2 cup water

Preheat the oven to 350°F , and place a rack in the center
- 1 cup whole white wheat flour
- 1/2 cup / 2 scoops of protein powder (unflavored or vanilla)
- 1 cup pumpkin puree
- 1/3 cup vegetable oil or coconut oil
- 2 whole eggs or 4 egg whites
- 1 teaspoon pumpkin-pie spice (ginger, nutmeg and cinnamon mixed together)
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon+
- 2 tablespoons rolled oats
