Cider-Roasted Carrots and Parsnips

1. Preheat the oven to 400 degrees F
- 2/3 cup apple cider
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons coarse-grain Dijon mustard
- 2 tablespoons honey
- 2 teaspoons chopped fresh thyme
- 1/4 teaspoon salt
- 1 1/2 pounds carrots, peeled and cut into sticks
- 1 1/2 pounds parsnips, peeled and cut into sticks
White Chicken Chili

Place all ingredients except the corn chips in a crockpot
- 1 32-ounce box chicken stock(organic)
- 3 cans white beans, left undrained (use all different types to add variety)
- 5 cups cooked chicken (rotisserie or boiled)
- 1 16-ounce jar salsa(use fresh salsa– this the key)
- 1 8-ounce block pepper jack cheese, grated
- 2 teaspoon ground cumin
- 2 cloves garlic, minced
- Black or white pepper to taste
- 1/2 cup finely crushed corn chips (optional, if you like your chili thicker)
- Sour cream, for garnish
Peanut Butter & Banana French Toast

Heat a medium size non-stick pan (or use non-stick spray) on medium heat
- Butter Flavored Non-Stick Spray (like Pam), for greasing
- 2 Egg Whites
- 2 TBSP Soy, Skim or Almond Milk
- 1 tsp Cinnamon, plus 1 tablespoon
- 4 slices Ezekiel, Sprout or Whole Grain
- 1 Bananas (cut into slices)
- 2 TBSP Peanut Butter
- 1 TBSP Agave Nectar for serving

1. Line a large cookie sheet with parchment paper
- 2 cups crisp rice cereal
- 3/4 cup quick-cooking rolled oats
- 1/3 cup raisins
- 1/2 cup honey
- 1/2 cup natural chunky peanut butter
- 3/4 cup semisweet chocolate pieces
- 1/3 cup white baking pieces
Texas Caviar

1. Bring peas and 8 cups of the water to boiling in a large pot
- 1 pound dry black-eyed peas, sorted (about 2 1/2 cups)
- 16 cups cold water, divided
- 1 shallot, peeled and cut up
- 3/4 cup extra-virgin olive oil
- 1/2 cup red wine vinegar
- 1 tablespoon sugar
- 2 teaspoons Dijon-style mustard
- 3/4 teaspoon salt
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon ground black pepper
- Dash cayenne pepper (optional)
- 3 red, green, and/or yellow sweet peppers, finely chopped
- 1 bunch green onions, thinly sliced (3/4 cup)
- 1 4 ounce jar diced pimientos, drained

- 4 large croissants
- 1 lb strawberries, washed and sliced
- 1 1/2 cups heavy cream

Crock-Pot Lasagna Recipe

In a medium bowl, combine the tomatoes, garlic, oregano, salt, red pepper and black pepper
- 3 cans (14.4 ounces) crushed tomatoes
- 3 cloves garlic , finely chopped
- 2 Tbsp. dried oregano
- 1/2 tsp. kosher salt
- 1/4 tsp. red pepper flakes
- 1/4 tsp. freshly ground black pepper
- 2 containers (15 ounces each) fresh ricotta
- 2 cups (8 ounces) grated mozzarella
- 1/4 cup grated Parmesan
- 12 lasagna noodles (about three-quarters of a 1-pound box)
- 5 ounces (about 6 cups) baby spinach

1. In a large bowl mash the beans with a fork
- 1/2 cup rinsed, drained canned no-salt-added black beans
- 1/2 pound lean ground beef
- 1 1/2 teaspoons chili powder
- 1/4 teaspoon ground black pepper

- 1 teaspoon canola oil
- 6 mini pita bread rounds
- 1/3 cup shredded reduced-fat cheddar cheese

World's Best Turkey Burger

Mix all ingredients together with hands
- 2 lbs ground lean turkey
- 3/4 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 4 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 4 teaspoons Dijon mustard
- 2/3 cup ricotta cheese (or less)
Quinoa Breakfast Pudding

1. Rinse quinoa in a fine sieve with Cold water for about one minute
- 1/2 cup quinoa
- 1 cup water
- 1 cup unsweetened almond milk
- 11/2 teaspoon Stevia for baking
- 1/2 teaspoon ground cinnamom
- 3 teaspoon maple syrup or honey
- 3 teaspoon toasted chopped walnuts
