Homemade Cheese Crackers

Preheat oven to 375˚. Put everything except the milk in a food processor
- 2 cups grated extra-sharp Cheddar cheese
- 1/4 cup butter, softened and cut into pieces
- 1 cup flour, plus more for dusting
- 1/2 teaspoon salt
- 2-3 tablespoons milk
Sweet Potato Souffle Soup

FIRST Fill a large stockpot with salted water and cook potatoes until fork tender
- 3 medium sweet potatoes, peeled and diced
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 32 ounces low-sodium chicken stock
- 1/4 cup brown sugar
- 2 teaspoon grated, fresh ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/2 tablespoon butter

Oatmeal Cookie

Make Lunch Fresh Preheat oven to 350°F
- 1/2 mashed banana (about 1 large)
- 1/2 cup natural peanut butter (or non peanut)
- 1/2 cup honey
- 2 tsp vanilla
- 1 cup rolled oats
- 1/4 cup whole wheat flour
- 1/4 cup ground flax seed (or an add. 1/4c flour)
- 1/4 cup nonfat milk powder or vanilla protein powder (+2TB of water if dough is too thick)
- 2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 cup dried cranberries or raisins

In a large bowl, sift together the flour, baking powder, salt and sugar
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 Tablespoon sugar
- 1 1/4 cups milk

- 3 Tablespoons butter, melted (optional)
Cranberry Oatmeal Muffins

1. Preheat oven to 400 degrees F
- 1 cup rolled oats
- 1 cup low-fat sour cream or 1 cup yogurt (I used 2% greek)
- 1/2 cup oil
- 1/4 cup white sugar or honey
- 1/2 cup brown sugar
- 1 egg
- 1 cup flour (I used white wheat)
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons orange rind, grated * 3/4 cup cranberries, chopped
- 1/4 cup orange juice
Peanut Butter Banana Oat Cookies with Chocolate Chips

Preheat heat oven to 350ºF
- 2 whole Ripe Bananas, Mashed Until Creamy
- 1/3 cups Peanut Butter, Creamy Or Chunky
- 2/3 cups Unsweetened Applesauce
- 1/4 cups Vanilla Whey Protein Powder
- 1 teaspoon Vanilla Extract
- 1 teaspoon Butter Extract, Optional

Fall Quinoa Salad

1. Add quinoa to broth or water in a medium saucepan and bring to a boil
- 1 1/2 cups quinoa, rinsed well
- 3 cups of low sodium vegetable broth or water
- 1 red bell pepper, diced
- 1/4 cup of red onions, diced
- 1 shallot, chopped
- 1/4 cup of dill, chopped
- 1/4 cup parsley, chopped
- 1/2 cup Balsamic dressing**
- Balsamic dressing ingredients: 1/4 cup olive, 1 TBSP flaxseed, walnut or sesame oil; 2 TBSP of apple cider vinegar or balsamic vinegar; 1 TBSP spicy mustard ; salt and pepper
Oven Roasted Cod with Tomato Sauce : Macaroni Kid

- 3 cups of your favorite tomato sauce
- 1/2 cup dry white wine

- 1 1/2 cups Quaker quick oatmeal
- 1 cup unsweetened almond milk (or skim milk)
- 1/2 cup brown sugar, packed
- 2 tbsp agave (or sugar, honey)
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tbsp oil
- 1 tsp vanilla extract
- 1/2 cup white whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup fresh blueberries
