Healthy Chicken Lettuce Wraps

Cut chicken into bite sized pieces, discarding the skin
- One Earth fare Rotisserie Chicken
- Two Boston Bibb Lettuces
- 4 carrots
- 1/2 cup toasted almond slivers
- 3 scallions sliced thinly
- 1/2 cup Cilantro chopped
- 1/4 cup mint chopped
- 1/3 cup crunchy peanut or almond butter
- few splashes of olive oil
- hot sauce to taste
- dash of honey
- 1/4 cup low sodium soy sauce
- sprinkling of red pepper flakes
- sprinkling of toasted sesame seeds
Thanksgiving Leftover Soup

1. Heat a large sauce pan on medium heat
- 2 TBSP Extra Virgin Olive Oil
- 1 Onion, diced
- 1 Carrot, diced
- 1 Celery Stalk, diced
- 2 Garlic Cloves, minced
- 6 cups Low-Sodium Organic Chicken Broth
- 2 Bay Leaves
- 3 cups White Turkey Meat
- 1 cup Kale or Swiss Chard, deveined and chopped
- 3 cups Purple or Sweet Potatoes, diced
- 1 TBSP Fresh Sage Leaves, chopped
- 2 cups Leftover Cooked Green Beans or Other Veggies
Garden Alfredo with Chicken

1. Heat a large skillet over medium-high heat
- 1 pound skinless, boneless chicken breast halves
- 5/8 teaspoon kosher salt, divided
- 1/2 teaspoon black pepper, divided
- Cooking spray
- 6 ounces uncooked pappardelle pasta
- 2 medium zucchini
- 2 medium yellow squash
- 2 teaspoons olive oil
- 5 ounces thin asparagus spears, trimmed(or sub broccoli)
- 1 red bell pepper, cut into thin strips
- 6 garlic cloves, thinly sliced
- 3/4 cup fat-free, lower-sodium chicken broth
- 1/2 cup half-and-half
- 2 teaspoons all-purpose flour
- 2 ounces Parmesan cheese, grated
- 2 tablespoons fresh flat-leaf parsley leaves
Farro Salad with Feta, Cucumbers & Sun-dried Tomatoes

Cook farro in salted water according to package directions until al dente, about 15-20 minutes
- 1 cup uncooked pearled farro
- 2 Tbsp minced red onion
- 1/4 cup mined sun-dried tomatoes
- 1/4 cup fresh grated feta
- 2/3 cup finely chopped cumcuber, seeds removed
- 1/4 cup finely chopped bell pepper
- 1 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1 Tbsp finely chopped mint or parsley
- salt and pepper to taste

- 4 sprigs fresh thyme, leaves only
- Salt and pepper
- 2 cups uncooked noodles
- Juice from 1/2 lemon
- 4 sprigs fresh parsley, roughly chopped
Chocolate Chip Pumpkin Protein Pancakes

1. In a bowl combine all ingredients 2
- 2/3 cup homemade pumpkin purée
- 4 tbsp coconut flour (found in the organic section)
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 1/2 cup chocolate chips, more as desired
- 1 scoop vanilla protein powder
- 1 tsp organic vanilla extract
- 4 organic eggs
- Optional: 1 tbsp raw organic honey

1. Prick sweet potato with a fork and cook in microwave for 4-5 minutes or until soft

- 8 Egg Whites
- 1 scp Vanilla Protein Powder
- 1 tsp Pumpkin Pie Spice
- 1/2 tsp Almond Extract
- 1/2 tsp Baking Powder
Chocolate Heaven Smoothie

Pulse ice cubes in blender to crush
- 1/2 cup crushed ice
- 1 cup almond milk
- 1 small frozen ripe banana
- 1 serving vanilla protein powder
- 1/4 of an avocado
- 1 tablespoon unsweetened cocoa (I like Hershey’s Special Dark- 100% cacao)
- 1 teaspoon of cinnamon
- 1 teaspoon agave nectar or honey (or I used a few drops of stevia)
- can add in 1 tsp vanilla extract and/or 1 Tbsp Chia Seeds
Zucchini Pizza Bites

- 1 medium size zucchini
- 2-3 Tablespoons of pizza sauce
- 4 oz of thinly sliced mozzarella (or shredded mozzarella)
- Optional toppings: mini pepperoni, sausage crumbles, mushrooms, olives, etc.
