Spinach 'n' Bean Tostadas

1. Preheat oven to 350 degees F
- 1/2 cup canned fat-free refried beans (I like the vegetarian)
- 2 tostada shells, about 1/2 oz each
- 1/4 cup thawed and well drained frozen chopped spinach
- 1/4 cup each salsa, shredded lettuce, chopped tomato, and fat-free cheddar cheese
- 2 tablespoon fat-free sour cream
- Hot sauce to taste (optional)

Homemade Pizza

Place water and sugar in the bowl of your stand mixer fitted with the dough hook and sprinkle the yeast over top
- (makes 6 mini pizzas or 2 full size) – cut this in half for small family!
- 2 pkgs (or 4 tsp) dry active yeast (or fast acting if you have starving little ones)
- 1 tsp sugar
- 3 1/2 cups (17.5 oz) flour (you can sub up to half whole wheat flour – I do 1/2 white & 1/2 100 % white wheat), plus more for dusting
- 1 1/2 cups warm water
- 2 1/2 tsp salt
- 1 Tbsp olive oil, plus more for brushing crust
- Cornmeal, for dusting surface
Waffle Mix

Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy
- 1 cup all-purpose flour
- 1 cup white wheat flour
- 1/4 cup ground flaxseed
- 1/3 cup Vegetable Oil or Coconut oil
- 2 tablespoons honey
- 1 Tablespoon baking powder
- 1 Teaspoon+ ground cinnamon
- 1 Teaspoon vanilla
- 1/2 teaspoon salt
- 1 2/3 cups milk ( I use 2%)
- 2 Eggs
- Cooking spray
Kitchen Sink Muffins

Preheat oven to 400 degrees
- Add Ins:
- 2 cups whole wheat pastry flour
- 2 tablespoons ground flax meal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/3 cup granulated sugar
- 1 cup unsweetened applesauce or yogurt
- 2 tablespoons melted butter
- 1/3 cup milk
- 1 cup fresh or frozen fruit, thawed
- 1/2 cup pecans, walnuts or almonds, chopped
- 2/3 cup dried fruit
- 1 teaspoon cinnamon
- 1 cup chocolate chips, semi-sweet
Spicy Brownies

1.Preheat oven to 350F. Spray a 9-inch square baking pan with cooking spray
- 1 1/4 cups flour
- 1/2 tsp baking soda
- 2 tbsp cocoa powder
- 1/2 tsp cinnamon
- 3/4 tsp ancho or chipotle chili powder
- 3 oz unsweetened chocolate (3 squares)
- 1/2 cup canola oil
- 1/2 cup brewed coffee, cooled
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1/4 cup dark-chocolate chips
Sweet Potato- Cheddar Crackers

Boil a whole sweet potato for 40-50 minutes until easily pierced with a fork
- 1 1/2 cups mashed sweet potato (about 2 medium)
- 3/4 cup grated Parmesan cheese (I used freshly grated but you could use the good ol canned variety)
- 1 cup extra sharp cheddar cheese, shredded (or any other cheese you like)
- 1/4 cup softened butter (NOT melted)
- 1 1/2 cups Whole Wheat flour (I use unbleached, white whole wheat flour)
- 1 teaspoon salt
- 1 teaspoon Turmeric (optional)
- 1/4 cup half-and-half or whole milk
Fruit & Veggie Smoothie

- 2 tbsp coconut flour
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp pumpkin spice
- 3 tbsp Enjoy Life's chocolate chips, more as desired
- 1 heaping scoop SFH grass-fed whey vanilla protein powder
- 1/2 tsp organic vanilla extract
- 2 organic eggs
- Optional: 1 tbsp raw organic honey
