Peanut Butter Dip

Take one 5.3-ounce container of nonfat Oikos Greek Vanilla yogurt
- 5.3-ounce container of nonfat Oikos Greek Vanilla yogurt
- 2 tbsp. peanut butter
- 1/2 tbsp. honey
- 1/8 teaspoon cinnamon.
- slices of apple, banana, and pear
Quick and Easy Granola

Mix first 5 ingredients in large bowl and spread over baking sheet
- 2 Cups Whole Grain Oats
- 1 Cup of Nuts (Almonds, Walnuts, Pecans, or Mix)
- 1/4 Cup Ground Flax Seed
- 1 Tbsp Cinnamon
- 1/2 Tsp Salt
- 2 Tbsp Coconut Oil
- 2 Tbsp Honey or Maple Syrup
- 1 Tsp Vanilla Extract
Baked Banana Oatmeal

1. Heat oven to 375 degrees with rack in upper third
- unsalted butter for baking dish and topping
- 1/8 teaspoon ground cloves
- 1 cup milk
- 1/2 teaspoon coarse salt
- 1 cup canned coconut milk, well stirred
- 1 1/2 cups rolled oats (not quick-cooking)
- 1 large egg
- 3 firm-ripe bananas
- 1 tablespoon packed light brown sugar, plus more for sprinkling on bananas
- Pure maple syrup
- 3/4 teaspoon ground cinnamon
- 1/3 cup chilled coconut milk or heavy cream

Quinoa Fruit Salad

1. Using a strainer, rinse the quinoa under cold water
- For the Honey Lime Dressing:
- 1 cup quinoa
- 2 cups water
- Pinch of salt
- Juice of 1 large lime
- 3 tablespoons honey
- 2 tablespoons finely chopped fresh mint
- For the fruit:
- 1 1/2 cups blueberries
- 1 1/2 cups sliced strawberries
- 1 1/2 cups chopped mango
- Extra chopped mint, for garnish-optional

- 1/2 cup Greek yogurt
- 1/4 cup sweetened vanilla almond milk
- 2 tablespoons almond butter

Spinach-Stuffed Baked Salmon

In a large skillet, heat the oil over medium heat, swirling to coat the bottom
- 1 teaspoon olive oil
- 2 ounces spinach
- 1 teaspoon grated lemon zest
- 1/4 cup chopped roasted red bell peppers, rinsed and drained if bottled
- 1/4 cup fresh basil, coarsely chopped
- 2 tablespoons chopped walnuts Cooking spray
- 4 salmon fillets (about 4 ounces each), rinsed and patted dry
- 2 tablespoons Dijon mustard (lowest sodium available)
- 2 tablespoons plain dry bread crumbs (lowest sodium available)
- 1/2 teaspoon dried oregano, crumbled
- 1/2 teaspoon garlic powder
- 1/8 teaspoon pepper
FRESH FRUIT REJUVENATING SMOOTHIE

- 1/2 cup rice milk (plain or unsweetened)
- 1 oz. chopped walnuts (sprinkle on top)
- 1/4 cup blackberries
- 1/4 cup frozen blueberries
- 1/4 cup dark cherries
- 1/2 banana
- 1/2 cup ice
