Slow-Cooker Beef Stroganoff Stew

In 3 1/2- to 4-quart slow cooker, layer onion, garlic and beef
- 1 medium onion, chopped (1/2 cup)
- 1 clove garlic, finely chopped
- 1 lb boneless beef tip steak, cut into 1/2-inch pieces
- 2 cans (18 oz each) Progresso™ Vegetable Classics creamy mushroom soup
- 1/2 cup water
- 2 1/2 cups uncooked wide egg noodles (4 oz)
- 1 cup sour cream
- 2 tablespoons chopped fresh parsley, if desired
Puff Pastry-Wrapped Chorizo

Preheat the oven to 400 degrees F
- 3 tablespoons finely chopped flat-leaf parsley
- 1 tablespoon olive oil
- 1/4 teaspoon smoked paprika
- 1 clove garlic, finely grated on a Microplane
- 2 sheets frozen puff pastry, thawed (from one 11-ounce box)
- 10 .5 ounces Spanish chorizo, casing removed, cut crosswise into 1 1/2-inch lengths
Creamy Parmesan Tomato and Spinach Tortellini Soup

Melt the butter in a pan over medium heat, add the onion and cook until tender, about 5-7 minutes
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, chopped
- red pepper flakes to taste (optional)
- 1/4 cup flour (rice flour for gluten free)
- 3 cups vegetable broth or chicken broth
- 1 (28 ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 8 ounces cheese tortellini (gluten free for gluten free)
- 1/2 cup parmigiano reggiano (parmesan), grated
- 10 ounces spinach, coarsely chopped
- 1/2 cup heavy/whipping cream or Greek yogurt
- salt and pepper to taste
- 1/4 cup basil, chopped (optional)

For the sauce: Heat a medium Dutch oven over medium-high heat
- 6 tablespoons extra-virgin olive oil
- 1 medium red onion, peeled and cut in half
- 1 clove garlic, peeled and smashed
- 1 carrot, peeled and grated
- 1 stalk celery, cut in half
- 1/2 teaspoon red pepper flakes
- Kosher salt
- Two 24.5-ounce bottles tomato puree, such as Mutti
- One 4-inch Parmesan rind
- 5 sprigs fresh basil
- 1 cup ricotta, at room temperature
- 1 cup torn stale Tuscan bread, without crust (about 2 small slices)
- 1/2 cup milk, at room temperature
- 1 egg, at room temperature, beaten
- 1/2 cup grated Parmesan
- 1/4 cup fresh Italian parsley leaves, chopped

Skillet-Roasted Lemon Chicken

Preheat the oven to 450 degrees F
- 2 teaspoons fresh thyme leaves
- 1 teaspoon whole fennel seeds
- Kosher salt and freshly ground black pepper
- 1/3 cup good olive oil
- 1 lemon, halved and sliced 1/4 inch thick
- 1 yellow onion, halved and sliced 1/4 inch thick
