Heat 4 inches of oil in a Dutch oven over medium-high heat until a deep-fry thermometer registers 350 degrees F
- Vegetable oil, for frying
- 3 eggs, whisked
- All-purpose flour, for breading
- 2 cups Italian-style breadcrumbs
- Kosher salt and freshly ground black pepper
- 1 package frozen ravioli (about 9 ounces)
- Grated Romano cheese, for coating ravioli
- Chopped fresh parsley, for coating ravioli
- Favorite marinara sauce, for serving
Golden Parmesan Potatoes

Heat oven to 425°F. Rinse potatoes; pat dry with paper towels
- 2 lb. Yukon gold potatoes (about 8), cut into 1/8-inch-thick slices
- 3 Tbsp. butter, melted, divided

Oatmeal Biscuits with Apple Butter Yogurt

Preheat the oven to 425 degrees F
- 2 cups all-purpose flour
- 1 1/2 cups old-fashioned oats
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1/4 teaspoon cinnamon
- 8 tablespoons (1 stick) cold butter, cut into chunks, plus 4 tablespoons butter, melted
- 1/2 cup whole milk
- 2 cups low-fat vanilla yogurt
- 1 cup apple butter
- 2 Gala or Honeycrisp apples, chopped
APPLE BUTTERMILK MUFFINS

Preheat oven to 400. Grease 12 muffin pan cups
- 2 cups flour
- 1/2 cup light brown sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup buttermilk
- 1/4 cup vegetable or canola oil
- 2 tsp. vanilla extract
- 1 large egg
- 2 medium Golden Delicious apples, peeled, cored and diced (2 cups)
- 1/2 cup walnuts (optional)
- 1 TB sugar
- 1 TB cinnamon
Arancini (Crispy Risotto Balls)

For the bolognese sauce: Heat the olive oil in a large pot over medium-high heat
- BOLOGNESE SAUCE:
- 1/4 cup olive oil, plus extra as needed
- 1 pound ground beef
- 8 ounces ground hot Italian sausage Kosher salt and freshly ground black pepper
- 2 carrots, small dice
- 2 stalks celery, small dice
- 1 onion, small dice
- 2 cups tomato sauce
- ARANCINI:
- 4 tablespoons extra-virgin olive oil
- 1/2 cup onion, finely chopped
- 1 teaspoon kosher salt, plus more for seasoning
- 1 cup Carnaroli rice
- 1/2 cup dry white wine
- 4 cups chicken stock, hot 1/2 cup finely grated Romano cheese, plus extra for serving
- Freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
- Provolone cheese, diced into 1/4-inch chunks Vegetable oil, for deep-frying

- 2 cups flour
- 1/2 tsp. salt

- 2 egg yolks
- 1 tsp. vanilla
- 2 Tbsp. dry JELL-O Vanilla Flavor Instant Pudding

- 1 cup shredded Gruyere
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh thyme leaves
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Mac & Cheese Prosciutto Bites

- 8 –12 ounces thinly sliced prosciutto
- 8 ounces elbow macaroni
- 2 tablespoons butter
- 1/3 cup panko (Japanese breadcrumbs)
- 1 1/4 cups lowfat milk
- 1 1/2 tablespoons all-purpose flour
- 1 1/2 cups shredded Gruyère cheese
- 3/4 cup shredded extra-sharp cheddar cheese
- Salt and pepper
- 3 tablespoons chopped fresh chives
Sweet n' Spicy Black Bean Salad

Mix all DRESSING ingredients well
- DRESSING
- 1/2 c sugar
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/4 c canola oil
- 1/3 c apple cider vinegar
- SALAD
- 2 can(s) black beans (16 ounce) rinsed and drained
- 1 c green bell pepper, diced
- 3/4 c red bell pepper, diced
- 1/3 c white onions, diced
- 1 c corn, can use canned and drained, or frozen
- 1 Tbsp jalapeno peppers, diced
- 1 tsp garlic powder
- 1/4 c cilantro, chopped
