Blueberry Crumb Cake

Preheat oven to 350. Grease an 8 inch square pan
- TOPPING
- 5 Tablespoons butter -- at room temperature
- 1/4 cup sugar
- 1/3 cup packed brown sugar
- 1/3 cup flour
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts
- CAKE
- 1 pint (2 cups) blueberries
- 2 cups plus 2 t. flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 2/3 cup sugar
- Grated zest of 1/2 lemon or 1/4 orange
- 6 Tablespoons butter -- at room temperature
- 1 teaspoon vanilla extract
- 2 large eggs -- at room temperature
- 1/2 cup buttermilk
Oatmeal Chocolate Chip Cookies

Preheat oven to 350. Line two baking sheets with parchment paper
- 1 stick margarine or butter
- 1/2 cup vegetable shortening, trans fat free
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 3/4 teaspoon salt
- 1 Tablespoon cider vinegar or white vinegar
- 1 large egg
- 1 teaspoon baking soda
- 1 3/4 cups white whole wheat flour
- 1 cup quick cooking oats
- 3 cups chocolate chips
Brussels Cookies

Preheat oven to 350. Line baking sheets with parchment paper
- 3/4 cup flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 8 Tablespoons butter or margarine -- at room temperature
- 3/4 cup sugar
- 1/2 teaspoon orange extract
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon grated orange zest
- 2 large egg whites -- lightly beaten
- 1/2 cup finely chopped almonds
- 1/4 cup quick cooking oats
- FILLING
- 1 ounce unsweetened chocolate
- 4 ounces semisweet chocolate
Dijon-Orange Marmalade Chicken

In a small saucepan, mix marmalade, mustard, honey, lemon juice, and curry powder
- 1 cup orange marmalade
- 8 ounces Dijon mustard
- 1/4 cup honey
- 1 Tablespoon lemon juice
- 1 Tablespoon curry powder
- 2 whole chickens -- cut up
Beet and Pear Kugel

Preheat oven to 350. Place beets and pears in a large bowl
- 7 medium beets -- cooked and shredded
- 5 medium pears -- peeled and cut into chunks
- 4 eggs
- 3/4 cup potato starch
- 1/3 cup oil
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
Balsamic Dressing

Mix all ingredients
- 1/4 cup balsamic vinegar
- 1/4 cup minced green onions
- 2 teaspoons dried parsley flakes
- 1 teaspoon dried tarragon
- 2 Tablespoons dijon mustard
- 1 1/2 Tablespoons oil
- 1 Tablespoon water
- 1/8 teaspoon pepper
- 3 cloves garlic
Honey Glazed Salmon

Combine first 6 ingredients in a small bowl
- 2 Tablespoons minced shallots
- 1 teaspoon dried thyme
- 3 Tablespoons honey
- 1 Tablespoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 4 6 ounce salmon fillets
Comforting Chicken

In a large skillet or Dutch oven, saute onion in margarine until tender
- 1 medium onion -- sliced into rings
- 1/2 cup margarine
- 1 whole chicken -- cut up
- 4 medium potatoes -- peeled and quartered
- 4 medium carrots -- quartered widthwise
- 1 cup whipping cream*
- 1 Tablespoon minced fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Wheat Berry Waldorf Salad

Soak wheat berries in water enough to cover for at least 6 to 8 hours or overnight
- 2 cups wheat berries
- 7 cups water
- 1 cup chopped walnuts
- 2 medium apples -- unpeeled, cored and chopped
- 1 cup finely chopped parsley
- 1/4 cup apple cider vinegar
- 1/4 cup apple juice
- 1 Tablespoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon
- 1/2 cup olive oil
- 1/8 cup lemon juice
Amaretto Bars

For Crust: Beat flour, butter and brown sugar in large mixing bowl until crumbly
- CRUST
- 3 cups flour
- 1 cup margarine -- cut into pieces and softened
- 1/2 cup packed brown sugar
- FILLING
- 4 eggs
- 3/4 cup light corn syrup
- 3/4 cup sugar
- 1/2 cup amaretto liqueur or 1/2 teaspoon almond extract
- 2 Tablespoons margarine -- melted
- 1 Tablespoon cornstarch
- 7 ounces sliced almonds
- 12 ounces (2 cups) chocolate chips -- divided
