Brisket with Pears and Wine

Heat oil in a wide, shallow pot
- 1 4 pound shoulder roast
- 5 Tablespoons oil
- 4 1/2 cups sweet red wine
- 2 medium onions -- sliced thinly
- 6 cloves garlic -- sliced
- 3 Tablespoons honey
- 2 Tablespoons tomato paste
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 4 pears -- cored and cut into eighths, lengthwise
Eclair Cake

Mix pudding with milk until thick
- 2 packages French Vanilla jello pudding
- 3 cups milk
- 8 ounces whipped topping
- 20 to 24 whole double graham crackers
- 1 stick margarine
- 1 cup sugar
- 1/2 cup cocoa
- 1/2 cup milk
Almond Sponge Roll

Preheat oven to 450. Prepare two 17x12 pans with parchment paper and grease them
- 2 Tablespoons cake flour
- 1/3 cup almond flour
- 4 large eggs
- 1 large egg yolk
- 1/2 cup plus 1T. sugar
- 1 teaspoon vanilla extract
Black Bottom Banana Bars

Cream butter and sugar. Add egg and vanilla
- 1/2 cup margarine -- softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups mashed ripe bananas -- (about 3)
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup baking cocoa
Sweet Potato and Pear Salad

In a saucepan, cook the sweet potatoes for 8 to 10 minutes into boiling water just until tender
- 2 pounds sweet potatoes -- peeled and cubed
- 3 pears
- 2 Tablespoons lemon juice
- 1/4 cup toasted pecans
- 1 cup chopped celery
- 1/3 cup raisins
- 1/3 cup light mayonnaise
- 1 Tablespoon honey
- 1/2 teaspoon ground ginger
- Salt
Mocha Mousse Pie

Melt chocolate chips and set aside to cool
- 1 1/2 cups semisweet chocolate chips -- melted and slightly cooled
- 2 cups whipping cream
- 2 Tablespoons instant coffee granules
- 2 Tablespoons sugar
- 1 teaspoon vanilla extract
- 1 chocolate crumb or graham cracker crust
Blueberry Yogurt Pops

- 1 8 1/4 ounce can pear halves in heavy syrup
- 1 cup blueberries
- 2 cups lowfat vanilla yogurt
Baked Sweet and Sour Chicken

Preheat oven to 300. Line bottom of baking pan with onion rings, celery, green pepper, yellow squash and mushrooms
- 2 3 pound chickens -- quartered or cut up
- 1 large onion -- sliced into rings
- 2 stalks celery -- sliced
- 1 green pepper -- sliced
- 1 yellow squash -- optional
- 12 mushrooms -- optional
- 4 potatoes -- optional
- Paprika -- optional
- SAUCE
- 4 Tablespoons oil
- 2 Tablespoons vinegar
- 1/3 cup ketchup
- 1/3 to 1/2 cup honey
Apple Cream Cake

Prepare cake batter according to package directions; pour into greased 13x9x2 inch baking dish
- 1 box yellow cake mix
- 3 cups sliced peeled tart apples
- 1/2 cup chopped walnuts
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1 cup whipping cream
Summer Squash Slaw

In a large bowl, combine squash, zucchini, red pepper, onions
- 2 small yellow squash -- julienned
- 2 small zucchini -- julienned
- 1 small red pepper -- julienned
- 1/3 cup sliced onions
- 3 Tablespoons oil
- 2 Tablespoons cider or white wine vinegar
- 1 Tablespoon mayonnaise
- 1 teaspoon sugar
- 1/2 teaspoon dill weed
- 1/2 teaspoon garlic salt
- 1/4 teaspoon celery salt
- 1/4 teaspoon pepper
