Drunken Chicken

Make a marinade by combining pineapple juice, soy sauce, rum, garlic and ginger
- 4 chicken cutlets
- 1 can (6 oz.) pineapple juice (3/4 cup)
- 1/4 cup soy sauce
- 1/4 cup rum
- 1 teaspoon bottled minced garlic
- 1 teaspoon chopped ginger
- 1 Tablespoon peanut or vegetable oil
- 2 or 3 bunches scallions -- sliced
- 3 Tablespoons cornstarch
- 1/4 cup water
- 1 5 ounce can sliced water chestnuts
Chinese Marinade for Chicken

Combine ingredients and marinate chicken in mixture
- 3 1/2 pounds chicken -- (about)
- 1/2 cup hoisin sauce
- 3 Tablespoons soy sauce
- 3 Tablespoons rice wine vinegar
- 2 Tablespoons sugar
- 2 Tablespoons ketchup
- 2 Tablespoons minced garlic
Quick Vanilla Frosting

Beat butter in large bowl until fluffy, about 30 seconds
- 3 sticks butter -- at room temperature
- 3 cups confectioners sugar
- 2 Tablespoons milk
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
Sweet and Sour Sauce

Combine all ingredients. Bring to a boil, stir constantly until sauce is thick and clear
- 1/2 cup water
- 1/4 cup ketchup
- 1/2 cup sugar
- 1 teaspoon cider vinegar
- 2 Tablespoons cornstarch
- 3/4 cup pineapple juice
Marbled Almond Frosting

In a large mixing bowl, beat 1 cup shortening with 2 tablespoons amaretto on medium speed until smooth
- 1 cup shortening
- 2 Tablespoons amaretto
- 4 cups confectioners sugar
- 4 Tablespoons milk
- 3 Tablespoons cocoa powder
Chocolate Ganache

Place cream in small saucepan over medium heat; bring to boil
- 3/4 cup heavy whipping cream
- 8 ounces semisweet chocolate -- coarsely chopped
- 1 Tablespoon liqueur -- optional
Spinach and Black Eyed Pea Salad

Combine buttermilk, mayonnaise, mustard,vinegar, hot sauce, and salt
- 2 cans black eyed peas -- drained and rinsed
- 3/4 cup buttermilk
- 3 Tablespoons mayonnaise
- 1 1/2 teaspoons spicy brown mustard
- 1/4 cup apple cider vinegar
- 1/8 teaspoon hot sauce
- 1/2 teaspoon salt
- 1/4 cup red onion -- diced
- 3/4 cup thinly sliced celery -- (2 stalks)
- 2 Tablespoons chopped fresh chives
- 4 cups baby spinach -- sliced into thick ribbons

- CAKE
- 2 large eggs
- 1 cup sugar
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 1/2 Tablespoons butter or margarine
- TOPPING
- 4 Tablespoons butter or margarine
- 1/2 cup plus 2T. dark brown sugar
- 4 Tablespoons milk
- 1 cup sweetened coconut flakes
Marinated Broccoli and Cauliflower Salad

Break broccoli and cauliflower into small pieces
- 1 large head broccoli
- 1 large head cauliflower
- 1 large green pepper
- 6 stalks celery
- 6 large mushrooms
- 1 cup sugar
- 1 teaspoon salt
- 1/2 cup vinegar
- 1 cup oil
- 2 teaspoons mustard
Red and White Pasta Salad

- 1 ounce sweet chocolate
- 1 teaspoon oil
- 1/4 cup sliced almonds
